Brazil Ice Beauty Anaerobic Honey Processing Introduction
Brazil has held the top position as the world's largest coffee producer for over 150 years. Today, Brazil cultivates approximately one-third of the world's coffee trees, and its market share in the global coffee industry once reached as high as 80%. To maintain coffee production at peak levels, the nation's industry has adopted specific and innovative approaches to achieve industrialized harvesting and processing in the most efficient and organized manner possible. Farms or estates are designed around these systems to maximize potential yield per hectare. Due to this focus on quantity, Brazil's reputation for producing high-quality coffee is not particularly strong.
Most farms employ quite rough harvesting methods, such as "stripping," where entire branches with coffee cherries are stripped off all at once. Alternatively, because local plantations are typically large and flat terrain, producers often use mechanical harvesting. Neither method considers the ripeness of coffee cherries, ultimately resulting in large quantities of unripe fruit among the harvested coffee cherries.
When discussing Brazilian coffee, one point worth mentioning is Brazil's pulped natural processing method, which has significant connections to today's various popular honey processing methods. Due to local water scarcity in Brazil, combined with humid climates in most regions leading to inefficient drying, traditional natural and washed processing methods proved impractical. Consequently, resourceful Brazilians created a processing method that involves removing the coffee cherry skin and drying on beds or concrete surfaces to rapidly improve drying efficiency. This method was later introduced to Costa Rica, where it underwent continuous refinement and became honey processing. It can be said that Brazil is the originator of coffee honey processing.
