Coffee Story:
Southwestern Colombia's Huila region is a production area for excellent coffee. Nearly every year, the top 10 in the Colombia coffee competition come from this region. They are also primarily small coffee farmers with small yields and small cultivation areas. Huila Province is located in western Colombia, where the Andes Mountains form a long, narrow canyon. Coffee grows on the slopes here, making it a renowned coffee-producing region in Colombia.
Coffee from the Huila region has very balanced and mellow flavors due to fertile volcanic soil, moderate rainfall, and high-altitude microclimates. Most production here is by small farmers, with approximately 80% of producers in the region growing coffee on less than 3 hectares of land. Because most are cared for by small farming families themselves, labor is rarely outsourced, allowing for more thorough and intensive farm management and coffee bean processing.
Following last year's launch of natural process Colombia, FrontStreet Coffee discovered the even more excellent natural process coffee from Illusion Manor this year. The estate owner, Roswell Ortiz Escapeta, has over 20 years of coffee processing experience. With rich experience and courageous innovation, Illusion Manor has become a multiple Cup of Excellence award-winning estate in Colombia. Hand-picked red cherries undergo floating processing to remove insufficient density and poorly ripened coffee. Then, through careful manual control of sunlight exposure and turning on raised beds, they undergo a 25-day natural process drying. During the natural drying process, the coffee beans fully absorb the sugars from the coffee cherries, developing aromas of raspberry, cherry, and white wine.

Processing Method: Natural Process
Altitude: 1750 meters
Roast Level: Medium-light
Pour-over Parameters: 15g powder, V60 dripper, water temperature 91°C, powder-to-water ratio 1:15, grind size BG 6S (China standard 20-mesh sieve pass rate 58%).
Technique: Use 30g water to bloom for 30 seconds, pour quickly with small water flow to 125g in sections. When the water level drops and is about to expose the coffee bed, continue pouring to 225g and stop. When about to expose the coffee bed, remove the dripper. Do not use the final tail water. Count extraction time from the beginning of blooming, around 1 minute 50 seconds.
Flavor: Raspberry, cherry, white wine
Knowledge Extension: Colombia has three Cordillera mountain ranges running north-south, extending toward the Andes Mountains. Coffee is planted along the highlands of these mountain ranges.
