Its superior geographical and climatic conditions make Colombian coffee high-quality and delicious, renowned worldwide, and an essential presence in specialty coffee. Among these, the Huila region can be considered the flagship of Colombian coffee brands, producing coffees with delicate acidity, berry notes, and caramel aromas, offering abundant sweetness. Today, FrontStreet Coffee would like to recommend a Flower Moon Night coffee from the Huila region.
Huila
Huila Province is located in the southern part of the central mountain range in southern Colombia and is the country's most famous specialty coffee producing region. This area consists of hills surrounded by mountains, with cultivation altitudes above 1,500 meters. The most important rivers in Colombia converge here, bringing abundant water resources and moisture.
Contrary to the general impression of commercial Colombian coffee as balanced and smooth, many smallholder micro-batch specialty coffees actually possess distinct regional flavor characteristics.
In recent years, with the international market's emphasis on coffee quality and demands for specialty coffee, there has been a gradual shift away from the previous system of grading by bean size. Instead, the focus has moved to micro-regional selections provided by coffee farmers through smallholder organizations. Dozens of small farmers contribute their individual harvests, which are consolidated into micro-batches for sale. This approach allows for cupping each batch individually and directly selecting many high-quality, specific smallholder coffees.

Processing Method: Anaerobic Natural
Variety: Caturra
Pour-over Parameters: 15g coffee powder, V60 dripper, water temperature 91°C, powder-to-water ratio 1:15, grind size BG 6S (58% pass-through rate on Chinese standard #20 sieve).
Technique: Bloom with 30g of water for 30 seconds, then pour quickly with a small water stream to 125g. When the water level drops and is about to expose the coffee bed, continue pouring to 225g, then stop. Remove the dripper just as the coffee bed is about to be exposed. Do not use the tail-end water. Extraction time should be around 1 minute 50 seconds from the start of blooming.
