FrontStreet Coffee - Pour-Over Coffee Bean Recommendation: Introduction to Yirgacheffe Washed Tadato
Tadato is a cooperative (Banko Dhadhato) in Yirgacheffe, located in what can be said to be the most premium area of the entire broader Yirgacheffe region, namely the Gedeb region (if classified by ECX regions, it belongs to Kochere). Gedeb is situated in the southeastern corner of Yirgacheffe, about 50 kilometers south from Yirgacheffe town, with elevation rising from 1,850m in Yirgacheffe town to nearly 2,000 meters at the processing station, making it arguably the highest growing area in all of Yirgacheffe.
Ethiopian coffee farmers often refer to this area as Gedeb, mainly because the largest town center in this region is named Gedeb. Here, one can say we've reached the most remote area - continuing for less than dozens of minutes will bring us to Banko Tadato village. Banko Tadato village is one of the 16 villages (Kebele) in Gedeb, which of course includes Banko, Goten, and Werka villages - all originating from the extremely outstanding premium region of Gedeb.
Yirgacheffe is located in the Gedeo region of southern Ethiopia. This region governs the relatively well-known areas of Yirgacheffe and Kochere. Due to the special and unique flavor profile of coffee produced in Yirgacheffe, which is widely loved, it forms its own category in product classification and has always held a place in the global specialty coffee market.

Altitude: 1800-2000m
Processing Method: Washed
Pour-over Parameters: 15g coffee grounds, V60 dripper, water temperature 91°C, coffee-to-water ratio 1:15, grind size BG 6S (China standard 20-mesh sieve pass rate 58%).
Technique: Bloom with 30g of water for 30 seconds, pour evenly with small water flow to 120g in stages, when the water level drops and is about to expose the coffee bed, continue pouring to 225g and stop. When about to expose the coffee bed, remove the dripper. Do not use the last 5g of water. Start timing from the bloom, with extraction time around 2 minutes.
