Yirgacheffe comes from a small town called Yirga in the northwestern part of Sidamo province. Yirgacheffe coffee beans are among the most distinctive coffees in the world, rare and expensive. Produced in the highlands of Sidamo province, Ethiopia, at an altitude of 2,000 meters, it is an outstanding representative of African washed coffee. It has always enjoyed a high reputation among global coffee connoisseurs. This rare, high-quality washed Arabica coffee is suitable for various degrees of roasting, perfectly presenting fresh and bright floral and fruit aromas. With beautiful and complete bean shapes, it is a high-end coffee that is difficult to compare with general Mocha coffee. It has unique citrus and lemon fruit aromas, along with the fragrance of jasmine, and possesses a wine-like acidity with a clean, pure taste—like drinking freshly brewed fresh citrus fruit tea with a long-lasting aftertaste.

Washed Yirgacheffe - Blue Ginger
Origin: Yirgacheffe
Altitude: 1800-2000m
Variety: Local native varieties
Processing Method: Washed
Hand-pour Parameters: 15g of coffee grounds, V60 filter cup, water temperature 91°C, grounds-to-water ratio 1:15, grind size BG 6S (Chinese standard #20 sieve pass rate 58%).
Technique: Use 30g of water to bloom for 30 seconds, pour evenly with small water flow to 125g in stages. When the water level drops and is about to expose the coffee bed, continue pouring to 225g and stop. When the coffee bed is about to be exposed, remove the filter cup. Do not use the last 5g of water. Time the extraction from the beginning of blooming, which should be around two minutes.
Dry and Wet Aroma: Jasmine flower, lemon, citrus, honey
Flavor: Citrus, jasmine flower, lemon, green tea. At medium to low temperatures, the acidity is bright, with mango notes, medium body, layered complexity, and a long-lasting aftertaste.
