Elida Estate Overview
Elida Estate is located in the Boquete region, covering a total area of 65 hectares. It is one of the highest-altitude coffee estates in Panama. The estate is situated at the confluence of northern cold air currents and southern Atlantic warm currents. The fertile volcanic soil provides abundant nutrients for coffee. More than half of the estate lies within the Baru Volcano National Park, where all trees are strictly protected from cutting, creating an excellent natural ecological environment.
Of the estate's total area, 30 hectares are planted with coffee trees, while the remaining 35 hectares consist of pristine forest. Coffee is cultivated at altitudes ranging from 1,670 to 1,850 meters.
Coffee Varieties and Processing
Elida Estate primarily cultivates three coffee varieties: Catuai, Typica, and Geisha. The processing plant is located halfway up the mountain, allowing coffee cherries to be transported to the facility immediately after harvesting to ensure the quality of the coffee fruit remains unaffected.
The coffee flavor from Elida Estate is more intense and complex in aroma compared to most Panamanian coffees. However, the extremely high altitude has its disadvantages - due to large temperature fluctuations between day and night, Elida Estate's coffee requires 5 years of care after planting before the first harvest, making the waiting period considerably longer (typically, coffee in other regions only requires 3 years). Although plant growth is slower, it contributes significantly to the development of coffee flavor.
At Elida Estate, only fully ripe coffee cherries are hand-picked. The high maturity of the fruit naturally results in higher sugar content in the mucilage, which forms the foundation of Elida's premium flavor. Wilford has also experimented with various natural processing methods, including traditional drying racks, modern drying racks, courtyard-style sun exposure, shaded drying, and mechanical drying. During the natural drying stage, Wilford requires employees to carefully hand-sort and remove defective beans.
The estate produces high-quality Elida coffee using three processing methods: Washed Process, Honey Process, and Natural Process.
Achievements and Recognition
In 2018, Elida Estate achieved outstanding results at the BOP (Best of Panama) competition, winning three major awards: first place in both the Geisha Natural and Washed categories, as well as the Estate of the Year award. The Green Top Washed Geisha also set a new record with an exceptional score of 94.66, breaking the previous 2016 BOP record of 94.15 for Elida Green Top Washed Geisha.
Additional Knowledge: El Burro Estate
Elida Estate's subsidiary, El Burro Estate, also features a special processing method called ASD (Anaerobic Slow Drying Process). When El Burro cherries reach maturity, they are harvested and transported to the Elida mill, where they are placed in fermentation tanks for 5 days. They are then placed on drying beds in a courtyard covered with an acrylic roof, arranged in thick layers to dry slowly. The drying cycle lasts for 5 weeks - this is what we call ASD.
