Geisha coffee has become synonymous with specialty coffee in recent years, renowned for its unique citrus and jasmine floral notes that frequently win top honors in cupping competitions. Originating from Ethiopia, it traveled through Kenya and Tanzania before reaching CATIE in Costa Rica. It wasn't until 1963 that Geisha finally arrived in Panama.
In 2003, the Peterson family discovered the exceptional quality potential of the Geisha variety at Hacienda La Esmeralda. After extensive screening and selection, they identified this remarkable variety. In 2004, Hacienda La Esmeralda's Geisha made a spectacular debut at the Best of Panama (BOP) competition, continuously breaking price records at annual auctions and establishing the estate's prestigious position in the specialty coffee world.
Hacienda La Esmeralda encompasses four farms: Cañas Verdes, El Velo, Jaramillo, and Palmira, with Palmira being the first farm acquired. Harvested coffee cherries are sent to these four farms for post-harvest processing.
The Geisha from Hacienda La Esmeralda is classified into three grades: Red Label, Green Label, and Blue Label. The classification is primarily based on growing altitude, supplemented by actual cupping results. Today, FrontStreet Coffee will share the Green Label Geisha with you.
Green Label Geisha
Green Label represents the Reserve batch. While not the highest competition-grade beans, it still showcases the classic flavors of Geisha coffee. Like the Red Label Geisha, it's grown at altitudes of 1,600-1,800 meters, but the Green Label Geisha comes from micro-lots of three different farms: Jaramillo, Quiel, and Cañas Verdes! This grade of Geisha is available in both washed and natural processing methods.
Green Label Geisha beans are quite hard and have good water activity due to being from the new harvest season. The green beans are elongated with tapered ends and a shorter distance from the surface to the core. Therefore, during roasting, FrontStreet Coffee chooses high-temperature roasting with rapid dehydration and a faster roasting rhythm to express the Green Label Geisha's multi-layered fruit flavors and explosive floral notes! FrontStreet Coffee's cupping notes for the Green Label include jasmine, ginger flower, sweet orange, lemon, and honey. It's no wonder that Geisha frequently wins major awards and is beloved by coffee enthusiasts.

Pour-over Parameters
15g coffee, V60 dripper, water temperature 90°C, coffee-to-water ratio 1:15, grind size BG 5S (58% pass-through rate on China standard #20 sieve).
Brewing Technique
Pre-infuse with 30g water for 30 seconds. Using a small water stream, quickly pour to 125g in stages. When the water level drops and is about to expose the coffee bed, continue pouring to 227g and stop. When the coffee bed is about to be exposed, remove the dripper. Start timing from the pre-infusion, with extraction time around 2 minutes.
Many friends ask FrontStreet Coffee why their brewed Geisha tends to be acidic. This could be due to under-extraction from too low water temperature or inaccurate grind settings. After all, brewing is a process where every step is interconnected.
Knowledge Extension
As early as 2004, Hacienda La Esmeralda participated in the Panama Best of Panama (BOP) competition and made a spectacular debut, winning the BOP championship for multiple consecutive years. Geisha coffee consequently rose to fame.
