Ninety Plus Coffee comes from American specialty coffee creators and suppliers: NinetyPlus Coffee. NinetyPlus (90+) is both a coffee grower and a flavor creator. Since 2007, NinetyPlus has been at the forefront of driving changes in the coffee market. They have assembled top flavor creation teams in Ethiopia and Panama, treating coffee with sustainable practices. They grow rare, slow-growing, low-yield coffee varieties that coexist with forests.
"Ninety Plus" does not refer to all coffees that score above 90 points in evaluations. Good coffee may be available one year and not the next. Sometimes it appears in different estates and possesses various flavor characteristics. "Ninety Plus" refers to a premium coffee series of 13 flavor profiles, with taste quality and excellence far surpassing any other rare and precious coffee.
Region Introduction
Sidamo grows in the southernmost highlands of Ethiopia at altitudes between 4600-7200 feet (Sidamo Province). It is a famous specialty coffee region in southern Ethiopia, bordering Kenya, located southeast of Jimma and directly south of the capital. It typically has distinct sweetness and is preferred by most people.
Sidamo's coffee flavors are extremely diverse. Different soil types, microclimates, and countless native coffee varieties, coupled with towering mountains, highlands, plateaus, valleys, and plains within the region, create diverse topography. The local geology consists of nutrient-rich, well-drained volcanic soil with depths of nearly two meters, and the surface soil appears dark brown or brown. The region's greatest advantage lies in maintaining soil fertility through organic material circulation, using fallen leaves from surrounding trees or plant residues as fertilizer.
Name Origin
Drima Zede (meaning "candle light," the name of this Yirgacheffe coffee) means "Best Approach" in the local dialect. According to information provided by the original manufacturer, this Yirgacheffe is a specialized product series developed based on 90+ years of experience. The ancient natural processing method makes it difficult to obtain pure flavors, but Drima Zede, with 90+ technical support, only hand-selects the most mature coffee cherries. The natural drying process involves careful constant stirring to ensure uniformity. The final result is a very transparent and pure taste with significant changes between hot and cold temperatures. The aromas of fruit, flowers, and oak barrels are incredibly captivating.
