So what exactly is Golden Mandheling coffee? From the name, does it mean it's a higher grade than regular Mandheling coffee? FrontStreet Coffee tells you that Golden Mandheling is not a grade but a registered trademark of the Indonesian company P.W.N. (N.V. Pawani Medan,简称 PWN). Founded in 1957, the company exports Indonesian products such as coffee, rubber, cinnamon, cloves, and patchouli oil. It was the first company to export coffee from North Sumatra Island and the first company to make "Mandheling coffee" famous in Japan. Since 1977, the company has focused on exporting premium Sumatra Arabica Mandheling Grade 1 and Robusta AP-I Grade 2 coffee beans, mainly to Japan, Taiwan, and the United States, with exports to Japan and Taiwan accounting for over 95%. In Japan and Taiwan, "PWN" has become synonymous with "quality guarantee."

The local weather is often rainy with constant typhoons, and it's humid and rainy year-round, making it impossible to achieve the weather conditions needed for natural processing. Therefore, coffee farmers use the wet-hulling method to process coffee beans. Wet-hulling uses a washed processing method for fermentation, then performs semi-drying before removing the parchment through machines for final drying. The coffee beans enter storage completely bare. This accidental processing method makes Golden Mandheling coffee's flavor unique.
How to Brew This Golden Mandheling Coffee Bean
FrontStreet Coffee's articles have mentioned the relationship between coffee bean roasting and pour-over brewing. Light roast coffee beans and dark roast coffee beans will differ in water temperature and filter cup usage. Golden Mandheling coffee is a dark roast bean, so the water temperature should not be too high, and a Kono dripper should be chosen. If we continue to use the water temperature for light roast extraction, it will lead to over-extraction. FrontStreet Coffee Brewing Parameters for Golden Mandheling Coffee
Water temperature: 88°C, Coffee amount: 15g, Coffee-to-water ratio: 1:15, Grind size: Medium-fine (70% pass-through rate on #20 sieve).
Use segmented extraction, bloom with 2 times the coffee amount in water, i.e., bloom with 30g water for 30 seconds. The blooming process is needed to allow the coffee powder to release carbon dioxide from inside, making the later extraction more stable. Use a small stream to pour in circles until reaching 125g, then continue pouring until reaching 225g and stop. Once the water from the dripper has finished dripping, remove the dripper. Start timing from the beginning of pouring, extraction time is 2'00". Next, pick up the entire coffee and shake it evenly, then pour into a cup for tasting.
