FrontStreet Coffee - Panama Elida Estate Introduction
Panama's Elida Estate is situated in the renowned specialty coffee producing region of Boquete, Panama. The total area of Elida Estate is 65 hectares, with more than half located within the Baru Volcano National Park. Only 30 hectares of the estate are used for cultivating coffee trees, while the remainder remains pristine primary forest.
Elida Estate has always been famous for its natural processing method, but this particular bean uses NATURAL-ASD (Anaerobic Fermentation Low-Temperature Slow Natural) processing: freshly harvested coffee cherries are placed in sealed containers for 4-5 days of fermentation, then thick layers of coffee berries are spread on drying beds to undergo slow drying.
This processing method is also the same one used by the bean that won the Geisha Processing category championship at this year's Panama BOP competition! FrontStreet Coffee recently introduced this bean, and today it's finally properly aged. Let me share the brewing method for this coffee with you!

Ice Pupil Dripper
The ribs of the Ice Pupil Dripper are distributed vertically in a stepped pattern. The bottom of the dripper can present a suspended filter paper state, while at the top, the dripper and filter paper create a completely sealed configuration.
This design has a significant advantage: because the dripper and filter paper at the top are completely sealed, if too much water flows too quickly during brewing, or if the water temperature is too high and floods the drainage channels, there's no space for air to escape, causing the water level to drop more slowly. This creates a soaking effect similar to the KONO dripper, avoiding under-extraction.
Parameters & Technique: 15g coffee; medium-fine grind (BG 6S: 58% pass-through rate on China standard #20 sieve); water temperature 90°C; coffee-to-water ratio 1:15; bloom with 31g of water for 30 seconds, then pour with a small stream in the center to 124g. When the water level is about to expose the coffee bed, continue pouring to 230g. Remove the dripper when the water level is about to expose the coffee bed again. (Timing starts from bloom) Total extraction time: 2'00".
Flavor: Fermented aroma, with notes of nectarine, strawberry, berries, cane sugar, and cream.
As Panama's representative coffee, Geisha has won numerous awards in world competitions, making it a top choice for many coffee enthusiasts. Combined with limited production and excellent flavor, prices have continued to rise. Many cafés charge over 100 yuan for a cup of Geisha, while FrontStreet Coffee's Geisha is only 75 yuan, which is already very low compared to most cafés' pricing. This is mainly to allow everyone to enjoy the best coffee at the lowest possible price.
Knowledge Extension: The coffee cultivation altitude at Elida Estate ranges from 1,670 to 1,850 meters, making it one of the two highest-altitude coffee estates in Panama.
