Panama can be described as a heavyweight presence in the specialty coffee market. Because the Geisha coffee grown by major estates has won numerous championships in world competitions, Geisha coffee has become Panama's most famous coffee and is also the most expensive coffee in today's coffee market.

In 1780, Europeans brought the first batch of Typica coffee trees to Panama, marking the beginning of Panama's coffee cultivation history. To this day, coffee has not only become an important economic crop in Panama but has also shone brilliantly in recent years, frequently winning awards and becoming an indispensable origin in specialty coffee.

Panama's geographical location is exceptionally advantageous. The country is located at 9 degrees north latitude, with beaches on both sides connecting the Pacific and Atlantic Oceans, while to the east and west it borders coffee powerhouses Colombia and Costa Rica. The country is mountainous, and the convergence point of the central mountain range is home to Barú Volcano, one of the highest volcanoes in Central America. Many of Panama's growing regions have unique microclimates suitable for specialty coffee cultivation: Panama's rainfall sometimes comes from the Pacific, sometimes from the Atlantic.

At the end of the rainy season, a northern wind known locally as "Bajareque" blows through Panama's mountainous regions like cold air, slowing the ripening process of coffee cherries and increasing sugar content. Additionally, Panama has received assistance from the world's largest coffee-consuming country—the United States—gaining access to top-tier coffee processing technology, thus giving birth to Panama's uniquely flavored coffee. Typical Panama coffee beans are full-bodied yet lightweight, with moderate and uniform flavor and texture, balanced acidity, and pure flavor notes. In recent years, high-quality Panama coffee has also exhibited clean, clear, bright, and smooth mouthfeel with medium body.

Brewing Parameters

Water temperature: 91°C, coffee-to-water ratio: 1:15, grind size: BG-6S, V60 dripper. First pour: 35g, bloom for 40s. Second pour: 130g water, then pause. Wait for the water level to drop until it's about to expose the coffee bed, then perform a third pour to 225g total water. Wait for the water level to drop until it's about to expose the coffee bed, then remove the dripper. Discard the last 5g of water. Total extraction time: approximately 2:05s.

The aroma has very distinct floral and fruit notes. The entry presents a rich acidity that transforms into fruity sweetness—clean and full-bodied, transitioning to black tea flavors in the later stages, with a persistent sweet aftertaste.

Knowledge Extension

Geisha was originally used as a windbreak tree species in coffee estates, but now it has transformed into a world favorite. As early as 2004, after winning the SCAA (Specialty Coffee Association of America) competition championship, Geisha coffee beans with their unique floral and fruit aromas earned the title of Panama's national treasure.
