FrontStreet Coffee - Yirgacheffe and Coffee Flower brewing experience sharing

Ethiopia boasts unique natural conditions suitable for growing all imaginable coffee varieties. As highland crops, Ethiopian coffee beans are primarily cultivated at altitudes ranging from 1100-2300 meters above sea level, mainly distributed in the southern regions of Ethiopia. Deep, well-drained, slightly acidic, red soils with soft textures containing loam are ideal for coffee cultivation, as these soils are nutrient-rich and have sufficient humus supply.

The western highlands of Ethiopia have nurtured some new coffee varieties that can resist coffee berry diseases or leaf rust. Ethiopia possesses world-renowned diverse coffee types. Some of these major coffee types are famous worldwide for their unique aromas and flavors, including: Yirgachefe, Harar, Sidamo, Djimma, and Limu.

Among these, the Yirgacheffe, Sidamo, and Limu regions have the highest recognition.

Yirgacheffe coffee is mostly processed using the washed method, but there are also some premium beans intentionally processed using natural methods to enhance their charming fruity aromas and richness. Coffee trees are mostly planted in farmers' own backyards or mixed with other crops in farmland. Each household's production is limited, making it typical pastoral coffee. These mountain villages are filled with mist, spring-like throughout all seasons, with gentle summer breezes that are cool without being hot, rainy without being damp, and winters that don't cause frost damage, nurturing a unique [regional flavor] of citrus and floral notes, including citrus, jasmine, and tea aromas.

The Sidamo region is located in southern Ethiopia, extending to the Arsi and Bale administrative regions in the east, and to the Gamogofa administrative region in the west. Sidamo coffee is cultivated at altitudes between 1400m-2000m. Agriculture dominates the industry here, with main coffee growing areas located around the East African Rift Valley. Sidamo coffee flavors are extremely diverse, with different soil types, microclimates, and countless native coffee varieties creating obvious differences and characteristics in coffee produced by each town. Among these, Sidamo's most famous is Coffee Flower.

Variety: Heirloom native ancient variety

Altitude: 1800-2000m

Processing Method: Washed G1

Flavor Notes: Lemon, white peach, honey, black tea

Brewing Parameters

Water temperature: 91°C, coffee-to-water ratio: 1:15, grind size: BG-6S, V60 dripper. First pour: 30g, bloom for 30s. Second pour: 120g water, pause before the coffee bed is exposed. Third pour to 225g total, remove dripper before the coffee bed is exposed. Discard the last 5g of water. Total extraction time: approximately 2:00s.

Tasting Notes

Natural Coffee Flower: Rich floral and fruity aromas, strawberry and jackfruit notes, with rounded and substantial acidity upon entry, noticeable brown sugar sweetness, and persistent sweet aftertaste.

Washed Yirgacheffe: Fresh sweetness like white tea, with elegant jasmine green tea aroma paired with peach and citrus sweetness, creating a very refreshing and pleasant experience.

Knowledge Extension

The Banko Dhadhato Cooperative is located in a village in the Gedeb region, southeast of Yirgacheffe. It is organized by local small-scale coffee farmers from the Banko Tatado cooperative village and belongs to the YCFCU cooperative alliance organization.
