FrontStreet Coffee - Jamaican Blue Mountain Coffee Brewing Guide
The Blue Mountain Range is located in the eastern part of Jamaica. When the weather is clear, the sun shines directly on the azure Caribbean Sea, and the peaks reflect the brilliant blue light of the seawater, hence its name. The highest peak of Blue Mountain reaches 2,256 meters above sea level, making it the highest peak in the Caribbean region and a famous tourist destination. This area lies within the coffee belt, with fertile volcanic soil, fresh air free from pollution, and a humid climate with year-round fog and rain (average rainfall of 1,980 mm, temperature around 27°C). Such climatic conditions have created the world-renowned Jamaican Blue Mountain coffee, as well as the world's highest-priced coffee.
True Blue Mountain coffee is one of the world's most optimally grown coffees. Jamaica's weather, geological structure, and topography together provide an exceptionally ideal setting. Designated Jamaican Blue Mountain coffee can only be grown in the Blue Mountain region, located in the eastern northern part of Kingston, Jamaica. The mountain ridge that traverses Jamaica extends to the eastern part of the small island, with the Blue Mountain Range reaching heights of over 2,100 meters. The cool, foggy, and frequent rainfall creates a harmonious balance in this fertile land. Here, people use mixed cultivation methods to grow coffee trees, planting them alongside banana and avocado trees on terraced slopes.
Moreover, the mountains are extremely rugged, making the harvesting process very difficult (coffee harvesting is almost entirely done by women). Their coffee trees all grow on steep mountain slopes, making the picking process extremely challenging - only locally skilled female workers can handle it. It's crucial to select coffee beans that are perfectly ripe during harvesting; underripe or overripe beans will affect the coffee quality. Only the washed processing method is used.
The Blue Mountain region is a small area with only 6,000 hectares of cultivation, making it impossible for all coffee labeled "Blue Mountain" to be grown there. An additional 12,000 hectares of land are used to grow two other types of coffee (non-Blue Mountain coffee): High Mountain Supreme Coffee and Jamaican coffee.
Currently, the authentic representations of Blue Mountain coffee origin include six certification marks such as the Mavis Bank Central Factory (M.B.C.E), Blue Mountain Coffee Cooperative (M.H.C.C.T.), Portland Blue Mountain Coffee Cooperative (P.X.X.S.H.), Coffee Industry Board (Wallenford), Coffee Industry Board (St. John's Peak), and J.A.S, among others. Some estate-level coffees will also be indicated on wooden barrels.
Daily Brewing
Filter cup selection: V60 filter cup, Kalita fan-shaped, and KONO are all suitable.
Brewing: Water temperature 90°C, coffee-to-water ratio 1:15, grind size BG-6W, V60 filter cup, coffee-to-water ratio 1:15. First infusion with 30g water, bloom for 28-30 seconds. Second infusion to 125g water, then stop. Third infusion to 220g water total. Do not use the final tail section water. Extraction time around 1 minute 50 seconds.
Flavor notes: Dark chocolate, nuts, balanced sweet, sour, and bitter.

Certificates are divided into three types: (1) Quality certification certificates issued by the Jamaica Coffee Industry Board (2) Authorized sales certificates issued by Blue Mountain coffee manufacturers. (Blue Mountain coffee is distributed by 4 Jamaican government-licensed processing manufacturers and exported by 16 licensed exporters) (3) Jamaican Blue Mountain Coffee origin certificate.
