FrontStreet Coffee: The Origin of Flannel Filter Cloth

Some say that coffee brewed with flannel filters showcases the ultimate flavors of coffee.

Brewing Equipment:

  • Flannel filter cloth
  • Pour-over kettle
  • Server pot
  • Thermometer

Brewing Steps:

1. Soak the newly purchased flannel filter cloth in boiling water to clean and sterilize, then place it on the metal ring.

2. While the filter cloth is soaking, grind the coffee beans. The amount of coffee beans for flannel coffee is more than when using paper filters - about 40-50 grams, with a grind size between white sugar and fine sugar.

3. Dry the filter cloth, preferably using a clean absorbent cloth, and place it on the filter pot.

4. Fill the pour-over kettle to 6-7 full to preheat the filter cloth and drip device, then discard the hot water.

5. Pour the coffee powder loosely and evenly, with a slight depression in the center - no need to press it down.

6. Use the thermometer to measure water at 88°C and begin pouring into the pot, moving from outside to inside in circles, finally pouring in the center while avoiding the flannel filter cloth.

7. When the coffee liquid reaches half the desired amount, stop pouring for 10 seconds. Wait for the coffee grounds to settle about 5mm, then start the second pour, moving from inside to outside in circles.

8. When the coffee liquid is about to reach the desired amount, you can stop pouring and wait for the remaining hot water to filter through.

9. Complete the brewing process. Warm the coffee cup, pour in the coffee, and enjoy a cup of aromatic, rich flannel-brewed coffee.
