Kaffa coffee is located in Hambella, which is part of Ethiopia's largest coffee producing region, Guji (GUJI), administratively belonging to the Oromia region. Hambella is situated across the mountain from Yirgacheffe's Kochore in the west, and borders Guji's Shakiso, Uraga, and Kercha sub-regions to the southeast, east, and north respectively. It is Ethiopia's highest altitude coffee sub-region (Harrar is Ethiopia's highest altitude main coffee region).
Currently, there are about 20 processing plants of various scales in the Hambella region. The DW company has four estate processing plants in Hambella's core Dimtu area: "Buku Abel," "Buku Saysay," "Haro Soresa," and "Tirtiro Goye."
Most of Ethiopia's coffee estates remain in their natural state. Local coffee farmers harvest only fully ripe coffee cherries by hand selection. All cherries are hand-picked and dried on African raised beds with limited layer thickness and continuous 24-hour timed turning to ensure even sun drying and ventilation, allowing for more precise control of fermentation levels. Most local processing plants also use traditional natural processing methods, fermenting and drying based on experience, resulting in unstable quality.
With red-brown organic soil, average annual rainfall exceeding 1200mm, altitude, day-night temperature differences, hand-picked pure red cherries, and the estate's unique natural environment for low-temperature fermentation, the harvest is highly concentrated. The new processing plant is closer, ensuring the fastest collection and processing of red cherries. The entire processing process is only more finely managed under the guidance of scientific measuring instruments, without any "tradition-breaking" improved techniques. Natural drying only begins when the red cherry sugar content reaches above 21, resulting in exceptionally high sweetness.
