Yirgacheffe

Yirgacheffe is a small town in Ethiopia, situated at an altitude of 1,700-2,100 meters. It is one of the highest altitude coffee growing regions in the world and synonymous with Ethiopian specialty coffee. Lakes Turkana, Abaya, and Chamo bring abundant moisture to this area.

In the Rift Valley, represented by the Misty Valley region, fog persists throughout the year, creating a spring-like climate with gentle breezes, cool and humid conditions. Thousands of coffee tree varieties thrive and multiply here, cultivating Yirgacheffe's unique terroir where floral and fruity notes intertwine in an ambiguous and ever-changing dance.

Yirgacheffe is located in the Gedeo region of southern Ethiopia. This region includes the well-known areas of Yirgacheffe and Kochere.

Yirgacheffe Chelelektu

Chelelektu is located within the Kochere production area of Yirgacheffe. The coffee cherries come from approximately 500 local smallholder family coffee farmers. These small farmers typically cultivate coffee on areas averaging less than 2 hectares, at altitudes ranging from 1,900 to 2,000 meters. Their washed beans have been cupped by professionals, with historical records reaching as high as 94 points.

Brewing Method

V60 Dripper Brewing

Water Temperature: 90-92°C

15g of coffee grounds

Coffee-to-water ratio: 1:15

Grind size: Medium-fine, similar to raw sugar granules (BG-5R grind size, with 60% passing through China standard #20 sieve)

Brewing method: Stage extraction. Bloom with 30g of water for 30 seconds. Using a small water stream, pour in a circular motion to 125g, then create a stage break. When the water level drops and is about to expose the coffee bed, continue pouring to 227g and stop. When the water level drops and is about to expose the coffee bed again, remove the dripper. (Timing starts from the bloom) Total extraction time: 1'54".

Yirgacheffe Chelelektu

Flavor profile: Lemon, citrus, berries, with a refreshing lemon finish. The mouthfeel is relatively smooth and gentle.
