A delicious pour-over coffee should be clean, balanced, rich in layers, and have distinct flavors.

The pour-over coffee brewing method is quite simple. Basically follow a 1:15 coffee-to-water ratio, with water temperature between 88-93°C being optimal. First rinse the filter paper, then distribute the coffee grounds, and finally brew, drip filter, and serve. Control the total time within 2 minutes.

How to Choose Pour-Over Coffee Equipment and Beans?

Cost-effective and easy-to-use options are the best. Choosing equipment is a very difficult task. I personally believe that cost-effective and convenient combinations are most important. A fine, pointed spout is crucial - the sharper the spout, the better it can deliver small, droplet-like water flow. The outlet tube shouldn't be too thin, as too thin means you cannot deliver larger water flow. A 0.7-1L pour-over kettle will feel relatively comfortable to handle. Basically avoid using pour-over kettles with capacity over one liter, as they are too heavy, tiring to hold, and make water pouring difficult to control. However, kettles with too small capacity will cause water temperature to drop too quickly.

The kettle body shape should preferably be narrow at the top and wide at the bottom. This way, when pouring in circles, it won't significantly affect the stability of water flow. Additionally, temperature must be controllable, so a combination of heat source + thermometer is needed.

Higher water temperatures will increase acidity, bitterness, body, and stimulation together. Brewing time doesn't significantly affect acidity, bitterness, and body, but stimulation will increase with longer brewing time.

Usually use hot water between 88-93°C. When determining water temperature, also consider extraction time. Also adjust temperature according to the material of the pour-over kettle. Copper pour-over kettles have good thermal conductivity, so the water inside will cool down quickly after being filled.

Large water flow can effectively stir the coffee grounds, but will also cause the water level to rise rapidly, leading to flooding, faster drainage, and potentially reducing extraction rate.

Small water flow won't cause immediate flooding, but the water column force won't penetrate the coffee grounds layer, only stirring the surface, and the brewing time will be longer.

How Should Everyone Properly Taste a Pour-Over Coffee?

Balance is Very Important

For me, balance is extremely important. Balance can basically be said to be the combination of all sensations. There must be fruit acidity, but not too much, then there should be sweetness, but not too much bitterness, comfortable mouthfeel, and a pleasant aftertaste.
