FrontStreet Coffee's Indonesian Civet Cat Cold Drip Coffee Making

Civet cat coffee (Kopi Luwak), Kopi (Indonesian for coffee), Luwak is what Indonesians call a tree-dwelling wild animal known as the "civet cat."

Cat poop coffee, produced in Indonesia, is one of the most expensive coffees in the world. Indonesia grows large quantities of coffee crops, and there's a wild animal called the civet cat, an omnivore with a pointed mouth and dark gray fur. Their favorite food is fresh coffee beans, which become fermented and digested in their bodies, eventually excreted as cat feces. The feces contain individual coffee beans, becoming the world's most expensive excrement. Due to its extreme rarity, the price is very expensive. Civet cats are distributed throughout the Indochinese Peninsula, India (northeast), Bangladesh, Bhutan, Sikkim, Nepal, and Kashmir regions, but only the Sumatran civet cat, the Indonesian civet cat, can produce cat poop coffee.

After processing and roasting, cat poop coffee becomes a luxurious coffee beverage, spreading to luxury kingdoms around the world. Local coffee farmers, in pursuit of high profits, capture wild civet cats and raise them at home to produce more cat poop coffee. However, cat poop coffee produced by farmed civet cats has correspondingly inferior color and taste. Even so, the production of this coffee remains extremely scarce, not affordable for all coffee lovers.

This coffee comes from the excrement of an animal called the civet cat (this animal is commonly known as the civet cat in Indonesia). Although it comes from stinky poop, one sip reveals a mouth full of rich fragrance and an indescribable sweetness. These wild civet cats love to eat plump, juicy coffee fruits, but cannot digest the hard seed kernels (raw beans), which are excreted with feces. After cleaning, they become Kopi Luwak raw coffee beans! Therefore, many people call it "cat poop" coffee.

Indonesians discovered that coffee beans fermented in the civet cat's stomach are particularly thick and mellow, so they collect civet cat excrement, filter out the coffee beans, and brew them for drinking. Due to scarce production and a unique fermentation process, the flavor differs greatly from regular coffee. Traditionally, coffee fruits are processed through washing or sun-drying methods to remove the skin, pulp, and parchment layer, finally extracting the coffee beans. However, Luwak uses a natural fermentation method within the body to extract the coffee beans, resulting in a special flavor.

Cold Drip Coffee Making Steps

1. Grind the coffee beans using a grinder at a 2-3 setting.

2. Place the filter screen at the bottom of the extraction bottle.

3. Pour the coffee powder into the extraction bottle and press it flat, remembering not to use too much force.

4. Place the extraction bottle above the collection bottle, then place the drip tray above the extraction bottle.

5. Prepare ice cubes and filtered purified water, and pour them into the water storage ball at a 1:1 ratio.

6. Turn on the control switch to evenly wet the surface of the coffee powder.

7. Adjust the throttle valve to about 40-60 drops per minute for optimal results.
