Introduction to FrontStreet Coffee's Yirgacheffe Washed Gedeb Coffee

The Gedeb Cooperative, located in the Woreda production area at the southeastern end of Yirgacheffe, was originally part of the Woreda Cooperative under the Yirgacheffe Union YCFCU.

However, as people pursued traceability of coffee raw beans, independent "single-origin" regions were gradually discovered by coffee hunters from around the world. Therefore, in 2012, Gedeb, with about 300 member farmers, independently established the "Gedeb Cooperative."

Gedeb village was one of the earliest village areas to be separated independently. Many small farmers were also members of the original Woreda Cooperative, so their coffee production skills are unquestionable.

Washed Processing

First, the raw beans are transported to the wet processing mill, where the pulp/flesh of the harvested berries is removed using a pulping machine. They are then left to ferment in fermentation tanks for 1-3 days until the mucilage layer decomposes (the duration depends on local temperature and humidity conditions). Next, the parchment beans are washed through channels for 30-60 minutes. Through the channel design combined with water flow, beans with low density and poor quality can be removed.

After washing, the high-quality parchment beans are placed on African-style drying racks for about 14 days. Once drying is complete, they are first stored in the processing plant's warehouse. Before export, the parchment beans are transported to the dry processing plant for hulling, then undergo a series of complex screening processes including foreign matter removal, silver skin polishing, and gravity screening. Finally, they are bagged for export.

Extraction Method

First pour 30g of water for a 30-second bloom; after the bloom ends, pour in a small circular stream to 225g; when the extraction time reaches 2 minutes, remove the filter cup.

This ultimate extraction method highlights the bright citrus-like acidity of the coffee, while making the flavors even more prominent. The front notes feature strawberry and sweet orange flavors with clear, uplifting citrus acidity; the middle notes present floral aromas and sucrose-like sweetness; the finish is round and smooth with a brief tea-like sensation.
