FrontStreet Coffee - Introduction to Costa Rica's Tarrazu Region

Coffee was introduced to Costa Rica from Cuba in 1729. Today the coffee industry is an important economic source for the country, with roughly one-third of the population engaged in coffee-related work. Most growing regions sit above 1,500 meters, because high altitude increases the acidity of the beans, slows the growth of the trees and allows for more intense flavor development. S.H.B. (Strictly Hard Bean) refers to extremely hard beans grown above 1,500 meters and signifies high-quality Costa Rican coffee. Depending on differences in regional altitude and the influence of various winds, rain and natural light, Costa Rican coffee shows subtle variations in flavor.

Costa Rican coffee is typically well balanced and smooth, without the sharpness of Guatemalan coffee. It tastes remarkably gentle and round, with acidity, sweetness and chocolate bitterness in perfect harmony, the classic profile of premium coffee. The seven major growing regions are Turrialba Valley (northeast of the capital San Jose), Central Valley (northwest of San Jose), Western Valley (west of the capital), Tres Rios (east of the capital), Brunca (southeast of the capital), Orosi (north of the capital) and Tarrazu (south of the capital). Among these, the Central Valley, Tarrazu and Tres Rios regions are the most renowned.

Honey Processing Method

So-called honey processing refers to producing green beans by sun-drying them with their mucilage intact. After the outer pulp is removed from the coffee bean, a layer of viscous, gelatinous substance remains. Traditional washed processing uses water to rinse this substance away, but because water resources are limited in some high-altitude growing areas, this direct sun-drying approach emerged.

The honey process is susceptible to contamination and mold, so it demands constant careful monitoring and continuous turning to speed drying and avoid undesirable fermentation flavors. Its advantage lies in preserving the original sweet flavor of ripe coffee fruit as fully as possible, giving the coffee delicate brown sugar notes and nut sweetness, while berry flavors support a wine-like aroma that makes it a very elegant product. Honey-processed beans have become hugely popular largely because of their sweetness and full body.

FrontStreet Coffee Recommendation

Honey processing was built on Brazil's pulped natural method, which removes the fruit skin before drying to shorten the drying time and avoid off-flavors from poor fermentation. The FrontStreet Cerrado showcases that Brazilian classic, with its clear cream, peanut, nut and chocolate notes. Costa Rica took the idea further and refined it into the honey process, splitting it into black, red, yellow and white honey according to how much mucilage is retained and how long the beans are dried.

To taste a bold expression of the style, try the FrontStreet Costa Rica Blackberry, which uses a distinctive black honey process that removes almost no mucilage and dries for at least two weeks under cover to keep the sun from drying the fruit too quickly, allowing the sugars to convert fully while the beans are turned at intervals. Given a light-to-medium roast, it releases a heady floral fragrance when ground and drinks with the special flavors of grape, berry and ripe blackberry.

For a delicate, layered option, the FrontStreet Costa Rica Mozart uses an innovative raisin honey method: the cherries are dried on raised beds for at least three days before the skin and pulp are removed, keeping 100% of the mucilage and demanding even stricter timing than black honey. The result is a richer, fruitier sweetness with distinctive osmanthus, pineapple and raisin aromas, delicious as pour-over, cold brew or moka pot.
