According to FrontStreet Coffee, the estate owner Ramirez comes from a coffee-growing family and began working in coffee production at the age of 18. He worked in coffee-related professions in Esverto City before purchasing the estate called Esverto Garden and planting Caturra variety.

Special Processing Method

The processing method for this coffee also differs from other regions. The farm's previous owner launched a special processing plan three years ago and taught Ramirez how to develop special processing projects. Driven by passion for coffee cultivation, Ramirez changed the original fermentation process that couldn't achieve desired results. He places coffee cherries in sealed fermentation tanks, using low-temperature fermentation to extend the entire fermentation time. With 15-20 days of fermentation, the coffee's flavor potential is maximized. Under time's nurturing, slow drying allows coffee cherries to develop optimal water activity during this process. This not only results in better flavor development but also allows green beans to maintain longer during seasonal storage cycles. After fermentation, these coffee cherries undergo natural sun-drying processing.

Considering the anaerobic natural processing method, FrontStreet Coffee tries to control the dehydration time between 9-9.5 minutes to ensure the coffee beans are roasted thoroughly, avoiding underdeveloped situations.

Brewing Recommendations

Due to the special processing, the coffee is more prone to water absorption and expansion. FrontStreet Coffee's baristas choose medium-coarse grinding, but the water flow should be controlled as small as possible to allow prolonged contact between coffee grounds and water for complete extraction.
