Big Tree Farm is located in the Santander region of Colombia. The farm owner, Vargas, has been growing coffee at Big Tree Farm for up to 20 years.
At Big Tree Farm, only fully mature, bright red coffee cherries are selected for picking. Defective floating beans are removed through washing, followed by two rounds of anaerobic fermentation with special enzyme groups. Great attention is also paid to the drying process of the coffee beans, avoiding excessive temperatures and adopting a slow drying method.
