The Five Basic Tastes of Coffee
The basic tastes of coffee are divided into sweet, sour, bitter, salty, and umami.

Sweetness
We typically use "sweet" to describe the taste of sucrose, commonly known as sugar, which is universally recognized as pleasant. Although sugar is the purest form of sweetness, many other foods naturally possess sweet flavors. For instance, fruits (containing fructose) and dairy products (containing lactose). Sugar is a direct source of energy, which is why we naturally enjoy consuming sweet foods.
Sourness
We use "sour" to describe the taste of acidic substances. Lemon juice and vinegar are the two most common acidic foods, both with high acidity (lemon juice contains fruit acid, while vinegar contains acetic acid). Acidity is typically palatable, but if too high, it immediately becomes difficult to consume.
Some acids make foods and beverages taste fresh and refreshing, while other sour flavors indicate that food has spoiled.
Bitterness
People's acceptance of bitterness varies greatly. Bitter foods, when eaten alone without other flavors to balance them, are often difficult to swallow. Most medicinal compounds have bitter flavors, though the intensity varies.
Saltiness
"Salty" is the term we use to describe sodium ions. Sodium chloride is the common form of salt. Many foods naturally contain sodium, such as seafood and celery.
Umami
"Umami" is the most difficult taste to capture. Umami is the taste of glutamic acid. We sometimes describe umami as meaty, mellow and rich, and satisfying.
The Truth About Taste Perception
Most people who have studied coffee have heard that the tip of the tongue is the part that senses sweetness, the front half of both sides of the tongue senses saltiness, the back half of both sides senses sourness, and bitterness is sensed at the back of the tongue. However, I must tell you that this knowledge is not entirely correct.
I want to tell you that the tip of the tongue can also perceive the other tastes, and similarly, both sides and the back of the tongue can also perceive the other tastes. This is because the taste receptors (taste buds) on our tongue are randomly distributed and not confined to specific areas. However, since there are more taste buds that receive sweetness at the tip of the tongue, we typically perceive more sweetness there. Similarly, for sour, salty, and bitter tastes, the perception is more pronounced in certain areas because there are more taste buds that receive the same taste in those regions.
