Coffee enthusiasts should be familiar with the moka pot - a brewing device that extracts coffee through pressure generated by hot water. Its simple operation and portable design make it especially suitable for coffee beginners.
Differences Between Moka Pot and Espresso Machine
The biggest advantage of a moka pot is its simplicity of operation. The pot consists of three parts, and requires only three steps: adding water, adding coffee grounds, and heating, to extract a cup of strong coffee. When we heat the moka pot, the water in the lower chamber heats up first and converts to steam, creating pressure that pushes the steam upward from the bottom. When hot water rises and reacts with the coffee grounds, the increasing pressure continues to push the extracted coffee liquid into the upper chamber, giving us the rich coffee we need.
The high-temperature, high-pressure extraction method of the moka pot is similar to the espresso we commonly encounter. The increased extraction pressure concentrates the coffee flavors more effectively, so coffee extracted by a moka pot also has a rich and mellow taste. When using a double-valve moka pot to make coffee, an additional pressure valve is added on top of the original design, increasing the pressure to enhance coffee concentration and produce more coffee oils.
It's important to note that although coffee extracted by a moka pot has a relatively strong taste, it still differs from the espresso we commonly encounter. The espresso we refer to today is extracted under more than 9 atmospheres of pressure, resulting in thick, rich, delicate, and complex coffee liquid. In contrast, the maximum pressure of a moka pot is only 2 atmospheres, far below the pressure value used by commercial espresso machines, resulting in relatively thinner coffee liquid with less rich and mellow flavor than espresso.
In coffee shops, you can see that freshly made espresso has a layer of golden crema floating on top. However, the extraction pressure of a moka pot is lower, resulting in thinner coffee, so it cannot be completely considered espresso. But if we want to enjoy a cup of rich coffee more quickly at home, FrontStreet Coffee believes the moka pot is also an excellent choice. Although the operation steps of a moka pot are very simple, attention to some details is necessary, otherwise the coffee can easily become bitter and difficult to swallow.
How to Brew Coffee with Crema Using a Moka Pot?
Although the operation steps of a moka pot are very simple, many production details require attention to obtain a delicious strong coffee with aromatic oils. Here, FrontStreet Coffee will use the Bialetti 3-cup classic moka pot as an example, using FrontStreet Coffee's house-roasted "Sunflower Warm Sun Blend Coffee Beans" to demonstrate the brewing process.
FrontStreet Coffee first removes the base of the moka pot and adds warm water to the lower chamber. This can shorten the brewing time while avoiding the coffee grounds heating too quickly, which would cause a bitter taste. The water level should be controlled below the pressure relief valve line. The safety valve prevents the coffee pot from exploding when coffee grounds are ground too finely, causing extraction channel blockage. If the safety valve is submerged in water and the extraction channel is blocked, the consequences of a high-temperature coffee pot explosion would be unimaginable.
To extract rich black coffee, the grind size should be finer than typical pour-over but coarser than espresso. If the grind is too coarse, it can lead to insufficient extraction and splattering issues; if too fine, it can cause over-extraction, resulting in heavy bitterness and making the coffee difficult to drink. Pour the ground coffee into the filter basket, spreading it evenly to fill the space. Use your finger to smooth it out and place it in the base. No need to press down forcefully - an overly compact coffee layer can easily block water flow upward, affecting extraction. If there isn't enough coffee, when water from the lower chamber enters the middle coffee layer under steam pressure, it cannot be fully extracted, which in turn will cause significant splattering in the upper chamber.
Next, tightly screw the upper and lower chambers together, wipe the pot dry with a towel, and place it on a gas stove or induction cooker for heating. When using open flame, try to control the flame so it doesn't exceed the base of the moka pot. Actually, there's no precise time requirement for brewing. Wait for the moka pot to heat up, and when you hear a hissing sound, turn to low heat. The coffee liquid and crema will slowly flow out. When you see the upper chamber is half full of coffee, you can turn off the heat source and move the pot to the table with a wet towel, using the residual temperature and pressure inside the pot to continue extracting the remaining coffee liquid.
Finally, pour the extracted coffee into a cup and begin tasting. At this point, you can see a thin layer of crema floating on top, with a rich whiskey-like aroma. Upon tasting, you can experience flavors of vanilla, roasted nuts, cream, and berries.
What Coffee Can Be Made with a Moka Pot?
Compared to black coffee made with pour-over, French press, AeroPress, and other devices, coffee made with a moka pot is richer. As long as you control the flavor and concentration during extraction, it can serve as a base - add water in a certain proportion to make a refreshing and delicious Americano, or incorporate silky hot milk for a simple version of a latte. Of course, we can also add other ingredients such as cream, condensed milk, or cocoa powder to enhance the coffee's taste.
