Yirgacheffe beans are classified into five grades, with the most common being Yirgacheffe G2, while the highest grade G1 is quite rare. Each coffee-producing country has its own grading method. China's grading system follows screen sizes like 17 and 18—that is, grading by bean size. This grading method might have been appropriate in the past, but for specialty beans, well, fortunately, China isn't yet running toward specialty coffee... anyway, Yirgacheffe's grading, like most coffee-producing countries, determines grade standards based on the number of defects. The Yirgacheffe growing region borders Sidama. Originally, Yirgacheffe beans were all classified under the Sidama region, but because of their unique style that Sidama couldn't accommodate, they established their own classification. Now the situation is exactly opposite—the inferior beans from the Yirgacheffe region are allocated to Sidama to make up numbers. The natural process Sidama beans indeed have traces of Yirgacheffe in their flavor and aroma, or perhaps like a miniature version of Yirgacheffe, with floral and fruit notes not as intense as Yirgacheffe's. Beans from African growing regions all have rich fruit and floral aromas—coffee beans grown in that land are like beans from a fruit kingdom, all imbued with fruitiness. FrontStreet Coffee's Yirgacheffe is imbued with lemon. After light roasting, it's covered with lemon's freshness, and upon tasting, it's like biting into an orange. If used for cold drip, after filtering through ice, its floral notes become even more pronounced. But whether served cold or hot, it remains like its appearance—delicate and subtle, never too stimulating, only leaving a feeling of gentle elegance.
