The Flannel Brewing Method: Extracting Coffee's Perfect Characteristics
There's a saying that flannel can extract all the characteristics of coffee and perfectly combine and express its excellent qualities.
In broad terms, flannel shares many similarities with filter paper, to the point that their usage methods are roughly equivalent.
FrontStreet Coffee believes that compared to filter paper, flannel has larger mesh openings, a softer texture, and no pulp taste. Due to its better permeability, it allows more oils and other substances to remain in the coffee liquid. In summary, coffee extracted with flannel is more "mellow" with better body.
Coffee brewed with flannel bears remarkable resemblance to coffee made with a siphon brewer, but it eliminates the complex and tedious operation process and excessive cleaning work. For those with limited time who prefer not to engage in hands-on brewing, this is a great blessing – a small net bag can produce a cup of rich, aromatic coffee.
Compared to a siphon brewer, flannel is indeed more convenient, but flannel also has its delicate side.
New flannel should be boiled in boiling water before use; flannel after use should be cleaned as soon as possible, preferably with clean water only, avoiding detergents; after cleaning, it should be stored in ice water. If flannel is stored dry, it will cause the fabric's permeability to deteriorate, and residual coffee substances will also spoil and produce odors. Such flannel basically loses all its advantages.
Which Side Should Face Inward When Brewing?
Friends often ask FrontStreet Coffee: the flannel cloth has one fuzzy side and one smooth side – which side should face inward when brewing?
Actually, both sides work fine. The difference is: if the fuzzy side faces inward, the coffee flow rate will be slightly slower, resulting in faster extraction. Therefore, FrontStreet Coffee can conclude: under the same grind size, if the fuzzy side faces inward, the coffee will be more stable and mellow; conversely, the coffee will be more lively and fresh.
FrontStreet Coffee suggests that if you're using flannel filter cloth for brewing, you can choose a grind size slightly coarser than for pour-over. For brewing beans, try selecting coffees with rich textures like Jamaican Blue Mountain or Mandheling to better highlight its characteristics!
