1. What is Flannel?

Flannel (Flano, Flannel) is a loanword referring to a soft, napped fabric woven from carded (cotton) wool yarn. It originated in Wales, England in the 18th century. In China, it generally refers to a coarse-spun (cotton) wool fabric with a variegated pattern, woven from mixed-color carded (cotton) wool yarn. Its interior is covered with a full, fine layer of fluff that doesn't reveal the weave pattern, giving it a soft and smooth texture, slightly lighter than melton wool.

2. Why Use Flannel?

There's a saying that flannel can extract all the characteristics of coffee and perfectly combine and express its various excellent qualities.

Broadly speaking, flannel and filter paper share many similarities, making their usage methods largely similar.

Compared to filter paper, flannel has larger mesh openings, a softer texture, and no paper pulp taste. Due to better permeability, it allows more oils and other substances to remain in the coffee liquid. In summary, coffee extracted with flannel is more "mellow" with better body.

3. Making Pour-Over Coffee with Flannel

When using flannel for the first time, rinse it with hot water, or you can scrub it with a brush. Then, place it in boiling water with coffee grounds or tea leaves and simmer for 10 minutes to remove the fabric's odor. Afterward, wash it with water. Remember not to use soap or soap powder at this stage, as their flavor cannot be removed. After using the filter cloth, clean it thoroughly with water. Do not use soap or let it dry in direct sunlight, as this will create odors. When storing it in the refrigerator, it's best to place it in a sealed container to avoid absorbing flavors from other foods. When using it, soak it in warm water, then wring it out thoroughly before use.

If you place the fuzzy side on the inside, coffee oils and fine particles will adhere to it. The flannel's mesh openings will quickly become clogged. To ensure smooth brewing, you should place the fuzzy side on the outside.

5. Flavor and Texture of Flannel Drip Coffee

Coffee brewed with flannel filter mesh is aromatic, delicious, and very ideal. The advantage of using a flannel filter is that you don't need to stir the coffee in the bag to ensure all coffee grounds contact with boiling water. The coffee will expand, produce foam, and gradually filter downward. The key is to determine the amount of coffee grounds, which in turn determines the amount of boiling water needed. During brewing, control the time that boiling water remains in the filter to approximately five minutes, adding water slowly and carefully. Through the filter, all coffee components will be completely extracted. Special attention must be paid to the care and storage of the cloth filter mesh; otherwise, the coffee flavor will decline.

The slow flow rate of flannel filter cloth can better express the round, smooth texture of dark roast beans. Regarding the grind size of the beans, FrontStreet Coffee recommends choosing a medium grind between that used for V60 and KONO drippers when attempting a single-pour brewing method. This is because if you choose the medium-fine grind commonly used for V60 drippers, the beans are prone to over-extraction; whereas if you choose the medium grind commonly used for KONO drippers, you might fail to extract the rich, full-bodied flavor characteristic of dark roast beans.
