Today's Coffee Bean Selection
Chose to taste: Panama Geisha, and Hawaii Kona (was attracted by the intoxicating fruity aroma when the bag was opened).
Detailed Introduction to Today's Two Coffees
Panama Geisha
Bright and clear color, transparent to the bottom of the cup.
Rich sweet aroma that doesn't diminish with temperature changes; after drinking, the cup still retains a rich sugary fragrance.
At high temperature, very distinct fruit acid dances in the mouth, stimulating both sides. Hold it briefly, swallow slowly, and the clear sweetness rises from the throat to the tip of the tongue.
As the temperature changes (drops), the mouthfeel becomes increasingly smooth and rounded. The bright, cheerful fruit acidity becomes gentler, while sweetness remains stable.
The aroma becomes more pronounced as temperature drops, with an intoxicating fragrance.
After finishing, the cup looks like it's coated with a transparent glaze made from coffee nectar - clear and refreshing.
Overall evaluation: Refreshingly bright, yet deep and reserved.
It presents an image in the mouth:
"A vibrant young man running in nature, passing through the seasons and years, experiencing all these trials, slowly maturing, becoming a wise man sitting before a bookshelf, profound and full of wisdom."
Hawaii Kona
The beans first reveal a very rich aroma that's hard to describe - like fresh earthy fragrance. After brewing, it smells like freshly turned lawn, with the sweetness of grass.
Very beautiful color - not the kind of clarity you can see through at a glance, but a beautiful, soft layering.
At high temperature, you can smell a very pure creamy aroma. In the mouth, there's wonderful nutty flavor. As the temperature drops, these two flavors gradually blend together.
The entire flavor profile fills the mouth with rich mixed aromas, making it difficult to distinguish specific fragrances.
It gives you the feeling of wanting to boil the coffee grounds into water and pour it into the cup for another round after finishing.
Overall evaluation: A bean with full expressive tension, perfectly rich aroma, and thick, substantial mouthfeel.
It presents such an image in the mouth:
(I don't like it when others describe this Kona as "a woman walking toward you with Hawaii's sea breeze")
"Churchill lights his familiar cigar, his determined eyes not obscured in the slightest by the rising smoke - a charm carved by time, where every movement unabashedly displays an unbeatable confidence."
Impressions of This Café
The style is extremely simple. The owner studied in Japan, and the first floor expresses a Japanese minimalist style.
The entire coffee tasting experience was very comfortable. The owner patiently waits for you to discover the coffee's mouthfeel yourself, then gently comments and enthusiastically explains key points of coffee tasting.
Face masks, thermometers, cups prepared with hot water, meticulous yet seemingly effortless brewing - everywhere reflects the owner's coffee philosophy.
A good coffee person invests their passion into coffee, trying to let others experience their own enthusiasm for coffee through the coffee itself.
The owner doesn't like being called a barista, but rather a "coffee person."
A wonderful artisan spirit, putting as much thought as possible into making good coffee.
I really like this style - pursuing the essence of coffee.
