Gedeb is a region located 60 kilometers south of Yirgacheffe town, named after the local Gedeb people. The Kokanna processing plant located in Kokanna town centrally processes coffee cherries collected from near Gedeb through refined washed processing and exports them under the name Gedeb. The coffee cherries collected here are all produced at high altitudes around 1900 meters. The processing plant strictly selects ripe red fruits, which undergo 36 to 48 hours of washed fermentation, and are finally dried on raised beds for 10-12 days to reach 11.5% moisture content. Before exporting the green beans, they undergo multiple selections to minimize defective beans. Therefore, this batch of beans smoothly passed the G1 grade certification of ECX (Ethiopia Commodity Exchange).
Tasting Profile and Brewing Recommendations
Such refined beans can absolutely withstand the test of light roasting. Even with a Medium roast level, she still has no sourness or any off-flavors. The refreshing and bright acidity can be described as "lively." This acidity includes both lemon and orange acidity, reminiscent of strawberry's sweet and sour taste, and carries a bit of peach juice flavor—unlike the simplicity of previous Yigas. After a moment, those acids gradually fade, giving way to infinite fruit flavors and lingering sweetness.
If in winter, this taste might seem too light and thin, but with gradually warming weather, nothing is more suitable for summer.
