When you drink a cup of coffee, what are your impressions of it? Bitter, sour? Smooth, mellow? Beyond the enjoyment of taste, a cup of coffee carries with it the stories of its origin, cultivation methods, and producers—waiting for us to savor and appreciate.
Mexico: A Land of Diverse Coffee Heritage
Mexico, this exotic place, features deserts, blue waters, mountains, huge cities, and small villages. In recent years, the growing demand for high-quality coffee has significantly increased buyers' interest in Mexican coffee, helping to elevate Mexico's status from producing coffee primarily used in blends to becoming recognized for single-origin and organic specialty products.
Chiapas: Mexico's Premium Coffee Region
Chiapas is an important premium coffee-producing region in Mexico, with most high-grade beans cultivated in high-altitude areas. Many of these high-altitude organic Mexican coffee beans are grown by indigenous communities. These indigenous communities have formed numerous cooperatives to secure assistance from international organizations, negotiate better prices, promote advances in coffee cultivation techniques, and practice organic farming methods for coffee cultivation.
CESMACH: Guardian of Sustainable Coffee
CESMACH stands for Campesinos Ecológicos de la Sierra Madre de Chiapas (Ecological Farmers of the Chiapas Sierra Madre) in Spanish. The cooperative was established in 1994 and is located in Mexico's ecologically rich El Triunfo region. To avoid damaging the natural ecosystem, coffee farmers adapted to the local environment by using organic cultivation methods, growing coffee under the shade of mist forests. Although this environment limits the coffee cultivation area, the fallen leaves under the shade provide fertilizer and nutrients for the coffee trees, while the diverse bird population in the ecological area helps control coffee tree pests.
CESMACH cooperative uses community development funds provided by fair trade to build warehouses, providing sufficient space and equipment for coffee storage and packaging operations, thereby improving quality and reducing costs.
Empowering Women Through Coffee
In addition to being environmentally friendly, CESMACH cooperative is also committed to women's empowerment. Locally, because husbands often need to move to other regions for work, many women must take on the responsibility of caring for their entire families, often facing difficulties such as insufficient income and food shortages.
CESMACH cooperative is one of the members of the Café Femenino Foundation. Café Femenino has long focused on women in coffee-producing regions worldwide, providing diverse income sources, fostering female leadership and cooperative management, hoping to change the situation of women facing unfairness and long-term neglect, and developing their confidence and independence.

The balance between acidity and bitterness is excellent, with diverse flavor layers at both high and low temperatures after extraction. It's worth trying at various roast levels; the acidity is also outstanding when lightly roasted. When deep roasted, it also displays excellent flavors, with moderate body and smoothness that remains refreshing, with aromas that last for a long time.
