Mexico: A Land of Rich Coffee Heritage

Mexico, this exotic place, has deserts, blue waters, mountains, huge cities, and small villages. In recent years, the growing demand for high-quality coffee has greatly increased buyers' interest in Mexican coffee, helping to elevate Mexico's status from previous blended coffee use to single-origin and organic specialty products.

Cup of Excellence: The Most Rigorous Coffee Competition

Cup of Excellence (COE) is the most rigorous and objective coffee competition.

CESMACH: Environmental Stewardship and Organic Farming

CESMACH is the Spanish abbreviation for Campesinos Ecológicos de la Sierra Madre de Chiapas (Chiapas Sierra Madre Mountain Forest Ecological Farmers Alliance). The cooperative was established in 1994 in Mexico's ecologically rich El Triunfo region. To avoid damaging the natural ecosystem, coffee farmers adopt organic cultivation methods, growing coffee under the shade of mist forest trees. Although this environment limits the coffee planting area, the decaying leaves under the shade provide fertilizer nutrients for the coffee trees, while the diverse bird species in the ecological area control pests on the coffee trees.

CESMACH cooperative uses community development funds provided by fair trade to build warehouses, providing sufficient space and equipment for coffee storage and packaging operations, thereby improving quality and reducing costs.

Empowering Women Through Coffee

In addition to being environmentally friendly, CESMACH cooperative is also committed to women's empowerment. Locally, because husbands often need to move to other regions for work, many women must take on the responsibility of caring for the entire family, often facing difficulties of insufficient income and food scarcity.

CESMACH cooperative is one of the members of the Café Femenino Foundation. Café Femenino has long focused on women in coffee-producing regions worldwide, providing diverse income sources, and empowering female leadership and cooperative management, hoping to change the situation of women facing unfairness and long-term neglect, developing their self-confidence and independence.

Three Seasons Orange Estate: A Family Legacy

Three Seasons Orange Estate is the general name for three small estates, cultivated separately by three generations of a family but harvested and processed together as excellent batches!

The respective estate names and three generations are: Los Azahares Primavera, Los Azahares Verano, Los Azahares Otoño 2017, and the family members: Diego Jiménez Luna, Pedro Jiménez Santiz, Antonia Giron López.

Three Seasons Orange Estate is located in Tenejapa municipality, Chiapas, at an altitude of 1570 meters. The varieties are Bourbon and Yellow Catuai, processed using traditional washed methods. Chiapas is located in Mexico near the border with neighboring Guatemala and belongs to a higher altitude coffee cultivation area. Since the first Cup of Excellence competition in 2012, Chiapas has produced many award-winning small estates. The cultivation management of Three Seasons Orange—picking—manual depulching post-harvest—simple fermentation tank treatment—drying after fermentation completion (sun-dried or machine-dried)—the above process being entirely self-managed is quite common, as they lack the resources to hire outsiders and the estates are all small-scale, becoming self-sufficient family estates.

Brewing Recommendations and Flavor Profile
