For pour-over coffee enthusiasts who've purchased Yellow Bourbon, how can you brew Brazilian Yellow Bourbon coffee to perfection? Below is an introduction to the pour-over method for Brazilian Yellow Bourbon coffee.
FrontStreet Coffee's Pour-Over Reference Method
Measure 15g of Yellow Bourbon coffee grounds and grind to a medium consistency. The particles should be slightly coarser than table salt. We use the BG grinder setting 6A (standard sieve pass rate 50%). Use water at 88°C with a Kono/Kalita filter cone for extraction. A powder-to-water ratio of approximately 1:14 is recommended.
Starting from the center of the filter cone, pour the hot water from the pour-over kettle in clockwise circles. Begin timing when you start brewing. Within 15 seconds, brew the coffee to 30g, then stop pouring. When the time reaches 1 minute, begin the second pour. During the second pour, continue pouring in clockwise circles from the center, just like before. Avoid pouring water directly onto the area where the coffee grounds meet the filter paper to prevent channeling effects.
Leave a small circle of space when pouring to the outermost edge of the coffee grounds, then continue pouring in circles toward the center. By 2 minutes and 10 seconds, the brewed coffee should reach 210g. At this point, the brewing process is complete.
