In 1948, the world-renowned Jamaican Coffee Industry Board (CIB) (the highest-level national coffee institution in the world) was officially established, along with the Jamaican government's legislation of the "Jamaican Blue Mountain Industry Management Regulations." The definition of Blue Mountain was strictly stipulated in these regulations. That is: only coffee grown in the Blue Mountain area designated by the Jamaican Coffee Industry Board, at cultivation heights above 1,524 meters (5,000 feet), and processed and manufactured by factories certified with five regulatory certificates, can be called "Blue Mountain Coffee." To ensure the purity of Blue Mountain Coffee, all exported Blue Mountain must not only meet the above requirements but also pass a series of strict and rigorous appraisals by the CIB, obtain a government-issued certificate, and be stamped with an official recognition seal before it can be officially named "Blue Mountain Coffee" and exported.

15g coffee grounds, water temperature 90°C, grind size 3.5, water-to-coffee ratio close to 1:15, total time around 2:00
Technique:
25-30g water for bloom, bloom time 30s; first pour to 120g then stop; vertical water flow, small water flow with slow circular motion; second pour to 225g, with slightly faster water flow and circular speed to reduce fine particles clogging the filter cup, which would cause over-extraction.
