New Season Blue Mountain Coffee

This new season Blue Mountain coffee comes from [Shanbei International] - one of the few trading companies in China that has obtained the import rights for Jamaica CIB-certified Jamaican Blue Mountain coffee beans. Not all Jamaican coffee can be called Blue Mountain; only coffee grown in specific Blue Mountain regions at high altitudes will have that velvety texture and balance. When we cupped this Blue Mountain G1 from Stony Manor Estate, we detected distinct blueberry notes, which was indeed a surprise. Therefore, we've also adjusted the roast level accordingly.

Daily Brewing

Dripper Choice: V60, Kalita wave, or KONO are all suitable

Parameters: 15g coffee, water temperature 90°C, grind size 3.5, water-to-coffee ratio close to 1:15, total time around 2:00

Technique: Bloom with 25-30g water for 30s; first pour to 120g then stop; use vertical water flow, small stream with slow circular motion; second pour to 225g, with slightly faster water flow and circular speed to reduce fine particles clogging the filter, which would cause over-extraction.

Other Extraction Method Parameter Recommendations

French Press: Grind size 3.5-4, water temperature 90°C

Siphon: Grind size 4, water temperature 89°C

AeroPress: Grind size 2.5, water temperature 88°C
