The Story Behind "Perci"
The name "Perci" is derived from "perspective." "Perspective" itself means viewpoint or perspective. Naming it "Perci" refers to how, during our sensory experiments with this coffee, we suddenly experienced the stimulation of a unique experience while conducting overall sensory evaluations as usual. This feeling gave us a different perspective on coffee than before, so we adopted the meaning of this word and named it "Perci" to remind us that this is a coffee that made us see it in a new light.
Cupping Notes
When we first conducted a blind tasting of this coffee, we were certain they were Ethiopian natural coffees. Our first thought was that this was definitely not a Geisha variety. The basic flavors of Geisha include chamomile, orange, and jasmine fragrance. However, for Perci, the basic Geisha flavors are only a very small component of its flavor profile. In addition, it has mango, pineapple, carob, banana, plum, red grape, honey, peach, red coral, and many other flavors.
Brewing Instructions
How to brew FrontStreet Coffee Panama [Frontsteet NinetyPlus 90+ Perci Geisha Natural] perfectly?
FrontStreet Coffee Pour-over Reference:
Weigh 15g of [Frontsteet NinetyPlus 90+ Perci Geisha Natural] coffee powder, pour into a grinder for medium grinding. The ground particles should be slightly coarser than table salt. We use BG grinder setting 5R (standard sieve pass rate 60%), water temperature 90°C, V60 filter for extraction.
Pour the hot water from the pour-over kettle in clockwise circles with the filter cup center as the focal point. Start timing when brewing begins, and brew the coffee to 30g in 15 seconds, then stop pouring water. When the time reaches 1 minute, pour the second time. For the second pour, like before, pour in clockwise circles with the filter cup center as the focal point. The water stream should not hit where the coffee powder meets the filter paper to avoid channel effects.
Leave a circle when brewing the coffee powder to the outermost edge, then brew circle by circle toward the center. At 2 minutes and 20 seconds, the coffee should be brewed to 220g, completing the brewing process.
