At the Ninety Plus Geisha Estate, there is a path leading from the farmhouse to the coffee drying area. When walking along this path, you'll see a row of exceptionally beautiful datura flowers. In the evening, these bell-shaped flowers emit an enchanting fragrance that captivates people, and this aroma lasts for only about an hour. We affectionately call this floral scent "Night Beauty." There is also a legend about datura. It is said that a local Panamanian indigenous tribe would place this flower under their pillows while sleeping at night to protect themselves from harm, believing that datura has special energy to protect families. Besides datura, deadly nightshade, henbane, and mandrake also belong to the "witchcraft herbs" family. Since these plants are believed to possess mystical powers, they are often used by shamans to prepare magical potions. Datura is an essential ingredient for shamans when preparing love potions; those who drink the love potion can win the heart of their beloved, but datura is also often prepared by shamans into a poison that can cause madness or death. How to Brew Panamanian Coffee [NinetyPlus90+ Juliette Geisha Honey Process]

FrontStreet Coffee Pour-over Reference:

Measure 15g of [NinetyPlus90+ Juliette Geisha Honey Process] coffee grounds, pour into a grinder for medium grinding. The ground particles should be slightly coarser than table salt - we use BG grinder setting 5R (60% standard sieve pass rate), water temperature 90°C, extracted with V60 dripper.

The hot water from the pour-over kettle moves clockwise in circles centered on the middle of the dripper. Start timing when brewing begins, reach 30g in 15 seconds, then stop pouring. When the time reaches 1 minute, pour again. The second pour follows the same pattern - clockwise circles centered on the dripper middle. Avoid pouring water where the coffee grounds meet the filter paper to prevent channel effects.

When pouring the coffee grounds, leave a circle at the outermost edge, then continue pouring in circles toward the center. At 2 minutes and 20 seconds, the coffee should reach 220g. Brewing complete.
