Finca Las Mercedes: A Premier Coffee Estate
Finca Las Mercedes is a large estate in El Salvador specializing in fine coffee production.
Three Sub-Estates
The estate is divided into three small farms: Tablón, La Avila, and La Primavera.
Award-Winning Quality
Among them, EL PEPINAL I from Tablón (altitude 1468 meters) won the Cup of Excellence championship in 2006 with a score of 94.00.
Three years later, La Avila from the La Avila estate (altitude 1523 meters) secured 6th place in the 2009 Cup of Excellence with a score of 89.43.
Professional Management
Under the professional technical management of the Las Mercedes estate, the small Finca Primavera (Spring Estate) is regarded as a precious treasure and continues to achieve fruitful results.
Coffee Processing
Coffee from Finca Primavera is processed consistently by their own farm.
When coffee cherries ripen, they are immediately hand-harvested and first processed using the washed method.
The ripe coffee cherries are placed in ceramic brick channels.
After being washed in water tanks, the coffee cherries are immediately poured into a pulper to remove the fruit skin.
This separates the coffee beans covered in parchment from the fruit.
Finally, the coffee beans are naturally dried for 8 to 12 days in a courtyard surrounded by beautiful mountain scenery.

Finca Primavera, under excellent natural conditions, not only cultivates extremely high-quality coffee beans professionally and consistently, but all coffee varieties can be traced back to their original cultivars.
The farm operators place great emphasis on protecting natural resources and have obtained Rainforest Alliance certification.
Additionally, they are committed to giving back to the entire community through various services.
For example: monthly food relief for elderly families, various construction projects, supporting community schools and community soccer teams, and donations to the Red Cross.
Most importantly, they provide workers with medical care, as well as seasonal food and clothing rewards to recognize their joint hard work.
