Suke Quto Farm
Suke Quto Farm was established in 2005, located in the Guji producing region of southern Ethiopia, and is a large-scale farm. The Ethiopian coffee varieties we typically encounter are rarely marked as estate-produced items, meaning Single Farm Producer (SFP) systems, which sometimes leads to the misconception that Ethiopia doesn't have estate-grown beans.
Farm owner Tesfaye Bekele's original vision was to establish environmentally friendly cultivation while preserving the native shaded forest conditions. The farm started with only 5 hectares but later expanded to 221 hectares. When a wildfire destroyed the forest surrounding the farm, many farmers began planting corn and millet. At that time, the owner had a new idea: to promote coffee seeds and shaded plant seedlings. Now, more and more nearby farmers deliver organic coffee to the farm for processing.
The farm has undergone significant transformations in recent years, focusing on organic and sustainable agricultural practices. With the assistance of Dutch green coffee importer Trabocca, a series of experiments have been conducted to improve coffee quality. Trabocca funded the farm's organic certification process, and after successfully obtaining certification, Suke Quto has gradually become a premier high-quality coffee producer.
Suke Quto only harvests mature fresh cherries, processing them with a 5-disk Brazilian depulper. They are first washed with spring water, then placed in fermentation tanks for 48 hours, where the mucilage breaks down during the fermentation process. The coffee is then dried on raised African beds for 9-13 days. The farm has 200 beds, sufficient for both washed and natural processing.
Operation Cherry Red
Operation Cherry Red is an initiative led by the Dutch company Trabocca, with half of the funding sponsored by the Dutch government. Since 2005, Trabocca has been cooperating with many small coffee cooperatives in Ethiopia, teaching and encouraging small coffee farmers to start with harvesting red cherries, improving post-processing techniques such as washing, natural processing, or fermentation methods to enhance coffee quality management.
During each harvest season, Trabocca invites coffee smallholder organizations and producers who have previously worked with them to participate in the program. They harvest micro-lots (approximately 1,500-3,000 kg), manually selecting 100% mature red coffee cherries in batches (hence the name Red Cherry Project). Trabocca provides financial, equipment, and technical resources to assist farmers and commits to purchasing coffee at excellent prices if the quality produced according to standard operating procedures (SOP) meets the required specifications.
