CAFECO was founded in 1972, with the founder's involvement in El Salvador's coffee industry dating back to the 1880s.

CAFECO's main processing facility, ATAPASCO, is one of El Salvador's large-scale processing plants that balances ecological conservation with advanced technology. Currently operating seven estates with a total cultivation area exceeding 1,700 hectares, CAFECO exports nearly 25,000 bags of coffee beans annually. Among these, San Emilio is CAFECO's most extensive coffee plantation, located in the Cordillera del Balsamo mountain range, approximately 30 minutes from San Salvador. The estate primarily cultivates Bourbon variety coffee, characterized by its smooth, mellow, and sweet flavor profile. San Emilio features numerous natural springs and has established its own independent coffee processing facility. It was CAFECO's first coffee estate to establish direct trade relationships with overseas roasters and is also trademarked in the United States.

This batch was processed using the pulped natural method. After harvesting, the coffee cherries are first sent to processing tanks for cleaning and sorting to remove defective beans, then machine-processed to remove the outer fruit skin while retaining the mucilage for sun-drying on elevated racks. This approach yields fermentation characteristics similar to honey processing, allowing the coffee fruit to continue absorbing its own starches during the process, enhancing the sweetness of the coffee beans.

Flavor Notes: Caramel sweetness, roasted hazelnut, orange peel aroma, gentle spices, soft fruit acidity, and syrup-like sweetness.
