GESHA RUBY DRY PROCESS EI02
Name: Gesha Ruby Dry Process EI02-02 Batch
Estate: EI Injerto Estate
Certifications: Rain Forest Alliance and CARBON NEUTRAL
Awards: 2017 COE 3rd Place
Batch: EI02-02
Harvest Date: January to March 2018
Variety: MALAWI GESHA
Altitude: 1710 masl
Average Temperature: 13ºC to 26ºC
Rainfall: Average approximately 1500 mm
Origin: Huehuetenango, Guatemala
Historical Origin:
This luxurious exotic seed was personally handed to us by an excellent friend from Malawi. Using the traditional method of preserving seeds in local soil and ash to extend storage time. The seeds are smaller than typical traditional Gesha varieties, but when the fruits ripen and are ready for picking, they display a dark ruby-like red color, which is the origin of its name. Additionally, the plants are slightly smaller than traditional Gesha varieties.
Post-Processing:
Dry processing method, also known as natural processing.
This high-density bean was dried in the public square for 3 days, then further dried in a large drying machine for 72 hours.
Cupping Notes:
This is a bean with remarkably excellent flavor and complexity. Both dry and wet aromas are rich with blueberry, raspberry, cherry, floral notes, and subtle spice notes mixed with the characteristic fermented wine aroma of natural processed beans. When tasting, the flavors of jasmine, melon fruits, and fermented sweet wine are quite prominent, followed by chocolate-like sensations with a light mint aftertaste that enriches the entire cup of coffee. After cooling, orange-chocolate flavors connect throughout.
