Farm History
In 2010, the Holguin family and Camilo Merizalde decided to establish a farm to cultivate the most unique experimental coffees. Camilo Merizalde, a renowned estate owner known for specialty coffee cultivation and experimentation in Colombia, besides his excellent San Alberto Estate and Finca Inmaculate, began cultivating and developing his newest estate, naming it Las Nubes (Cloud Estate). Drawing from his years of experience in estate management, variety selection, and cultivation, Camilo chose some of the world's rarest coffee varieties such as Geisha and Laurina to plant at Las Nubes Estate. In addition to these excellent traditional varieties, Camilo also introduced the Sudan Rume variety (also known as RS-510) from the Boma Plateau valley in South Sudan.
In 2014, Australian barista Sasa Sestic began collaborating with Camilo and the exciting Sudan Rume variety at the estate.
Sasa fell in love with this rare wild Sudan hybrid variety growing in Colombian soil. Inspired by Australia's wine industry, Sasa had an idea to enhance the fermented acidity flavor of Sudan Rume at Camilo's estate through anaerobic fermentation while providing stable temperature conditions, making it brighter and cleaner than washed processing.
The experimental project was a great success, and Sasa won the World Barista Championship title in 2015.
According to its pedigree analysis, Sudan Rume belongs to an earlier variety than Typica and Bourbon lines. Since Sudan Rume is primarily cultivated in Sudan and Ethiopia regions, its rich gene pool has continuously attracted scholars to study its disease-resistant genes over the years. However, due to lower yields compared to other varieties, it has not been widely adopted in coffee-producing countries. Compared to traditional common Geisha flavors, Sudan Rume possesses rarer but rich typical toffee and candy flavors, while also exhibiting a richer, heavier body.
About Las Nubes
The farm is situated in Colombia's coffee-producing region: Cauca. Located at the highest point in the area, it benefits coffee plant growth and overlooks the beautiful city of Cali. These coffee trees are planted in an area with fertile red soil, and irrigation systems have been built throughout most of the farm, providing all necessary resources for coffee tree growth.
Las Nubes Estate carefully selects Geisha honey-processed batches, ensuring that each coffee bean is picked when the fruit's brix level reaches 18-22%, and uses African raised beds for drying. During the initial drying phase, the coffee fruits are turned every four hours, accompanied by fan blowing to ensure average and stable drying, thereby guaranteeing excellent and beautiful flavors.
Brewing Recommendations
FrontStreet Coffee recommends brewing Colombian coffee with 90°C water, revealing flavors of mandarin orange, white grape, grapefruit, brown sugar, walnut, and almond.
