For the past century, coffee has been instrumental in Guatemala's economy. It is estimated that there are currently about 125,000 coffee producers in the region, making coffee the main export commodity, accounting for 40% of exported agricultural products. Up to 20 out of 22 provinces are engaged in coffee cultivation, with coffee beans grown in almost all regions. 98% of the coffee is shade-grown, dominated almost exclusively by Arabica beans. The main sub-varieties include Bourbon, Tipica, Caturra, Catuaí, Pache, and Pacamara. Guatemala boasts high altitudes and 300 different microclimates, combined with stable rainfall and fertile soil rich in minerals, all contributing to ideal coffee growing conditions, making it the most favorable among Central American countries.
Since the early 1990s, Anacafé has pioneered the classification of 8 different producing regions for high-grown hard bean (SHB) coffee based on coffee characteristics, growing climate, soil quality, and altitude: the Acatenango valley, Antigua, Atitlán, Cobán rainforest, the Fraijanes plateau, Huehuetenango, Nuevo Oriente, and the San Marcos volcanic region. The main harvesting season runs from December to March of the following year, with higher altitude regions like Huehuetenango extending until April. Once harvesting is complete and processing is finished, the beans are shipped.
While the Sleeping Beauty Estate (Finca La Perla) is gradually awakening, Finca Los Caballitos (Little Horse Farm), located in the same green Ixil Triangle highlands of western Guatemala (Ixil is the commonly used Mayan language in the area), has made its debut. Little Horse Farm sits on fertile black soil surrounded by three lagoons, with abundant water resources and beautiful mountain scenery. The Oscar family purchased this land and started from scratch. This batch of beans represents their first suitable harvest, making them very new to the market. The cherries are hand-picked when fully ripe and immediately processed right on their farm, where the pulp and fruit skin are promptly removed, followed by thorough soaking and fermentation, then dried in sunlit courtyards! This approach closely resembles the honey processing method or the technique used by La Esmeralda Estate.
