Immaculate Coffee Farm

Three estates - Las Nubes, Finca Inmaculada, and Finca Monserrat - are collectively known as Immaculate Coffee Farm, owned by the Holguin family. They cultivate rare varieties including Sudan Rume, Eugenoides, Laurina, Gesha, and Maragesha.

Sudan Rume

Sudan Rume originates from the Boma Plateau in southeastern Sudan, connected to the Ethiopian highlands. According to its pedigree analysis, Sudan Rume is an earlier variety than the Typica and Bourbon lines. It possesses excellent disease-resistant genes, but its yield is low and coffee cherries are relatively small, making it quite uncommon. Compared to traditional common sun-dried flavors, Sudan Rume's flavor profile is remarkably clean, with rare fruity aromas, rich toffee and milk candy notes, while demonstrating a fuller, heavier body. Australia's Sasa Sestic used Sudan Rume along with a special carbon dioxide maceration method to win the 2015 World Barista Championship.

Finca Inmaculada

Finca Inmaculada spans only 8 acres and is located in the Cauca mountain region of Colombia. Camilo and his partners, the Holguin Family, established this ideal coffee production area, dividing it into several small innovative farms. Each section is unique and suitable for cultivating different coffee varieties.

Rare Varieties Cultivation

Camilo imported 26 rare varieties from the Colombian Coffee Research Institute. These are typically not commercially cultivated because their yields are extremely low and they are very delicate, requiring sensitive cultivation techniques. Most cannot generate profits, but dedication to flavor and uniqueness makes this worthwhile.

Carbon Dioxide Maceration Method

Originally a winemaking technique where grapes are placed in sealed containers filled with carbon dioxide for fermentation. Sasa applied this fermentation method to coffee production. Once picked, coffee beans are placed in stainless steel containers with grape juice added, then sealed and pressurized with carbon dioxide for fermentation. This method, abandoning traditional cement and ceramic containers, presents more distinct flavors!
