Ethiopia's Eight Major Coffee Growing Regions

Ethiopian coffee mainly comes from eight major growing regions: Ekempti, Limu, Illubabor, Djimma, Harrar, Teppi/Bebeka, Sidamo, and Yirgacheffe.

The Diverse Flavors of Sidamo

Sidamo's coffee flavors are incredibly diverse. Different soil types, microclimates, and countless native coffee varieties create distinct differences and characteristics in the coffee produced by each town.

From 2010-2012, it continuously received high ratings of 92-94 points from the authoritative American coffee review publication Coffee Review, earning three consecutive exceptional evaluations. This demonstrates the extraordinary value of green beans from this region! The area features towering mountains, highlands, plateaus, valleys, and plains, creating diverse topography.

The region's geology consists of fertile, well-drained volcanic soil with a depth of nearly two meters. The surface soil appears dark brown or brown.

The area's greatest advantage lies in maintaining soil fertility through the natural circulation of organic matter. Natural fertilizers are provided by fallen leaves and debris from surrounding trees, as well as plant residues and roots.

Trabocca, the largest Dutch coffee merchant, entered this region five years ago and has been working with local coffee estates on production. They have donated coffee cupping laboratories and strive annually to improve the quality and yield of coffee beans. Trabocca company owns a 640-hectare coffee nursery. Today, they have 12 long-term employees with over 10 years of experience in coffee cultivation, production, processing, and marketing. In addition to these 12 employees, they also hire 3 qualified consultants and several short-term staff. During harvest season, over 300 people help with harvesting, with 150 of them working independently.

Haile Selassie: The Historical Legacy

"Haile Selassie" was originally the name of Ethiopia's last emperor, known as "the Lion of Judah." This emperor, born in the late 19th century, led Ethiopia to break free from European imperialist control in the 20th century. He was a controversial national hero and dictator. To this day, Haile Selassie is still considered by some believers to be the Messiah (savior) appointed by God to the mortal world.

Kebecha: A Small Cooperative with Big Dreams

Kebecha is a small coffee cooperative in a small town within the Dara production area of Sidamo province. Each small coffee farmer here owns an average cultivation area of about 0.6 hectares. Comprising hundreds of coffee farmers, their cultivation altitude reaches nearly 2,000 meters. The high altitude creates an ideal microclimate for producing exceptional coffee, with significant temperature variations and fertile soil, providing an excellent growing environment. The green beans themselves emit rich aromas of raisins and fermented wine fragrance.

All coffee is processed through private agriculture, meaning they don't belong to any cooperative. After selecting ripe coffee cherries, they bring them to the Kebecha processing plant for grading and preliminary hulling before wet processing. Then, depending on climate conditions, they ferment in water for approximately 36 hours. Afterwards, they are dried on high raised beds to remove the silver skin. After about 10 days, they can be stored in warehouses.

Sidamo Coffee Flavor Profile and Brewing Recommendations

Sidamo coffee has distinct citrus and floral aromas in its dry fragrance. When sipped, you'll experience citrus, grapefruit, and cranberry flavors with bright acidity. In the middle notes, lemon peel and delicate floral notes emerge, while the aftertaste presents black tea characteristics. The flavor is clean and varied, with a rich, layered mouthfeel.
