Coffee grown in Jamaica is also classified into three grades based on cultivation altitude: Jamaica Blue Mountain Coffee, Jamaica High Mountain Coffee, and Jamaica Prime Coffee. The Jamaican official authorities stipulate that only coffee beans grown between 1,000 and 1,700 meters above sea level can be classified as Jamaica Blue Mountain Coffee. Therefore, less than 40% of Jamaican coffee beans meeting this criterion can be classified as Jamaica Blue Mountain Coffee.

Furthermore, the Jamaica Coffee Industry Board has extremely strict grading standards for Jamaica Blue Mountain Coffee, classifying it into four grades based on bean size and defect probability: No. 1, No. 2, No. 3, and Peaberry.

Scarcity and Demand

Jamaica Blue Mountain No. 1 coffee beans, in addition to meeting the altitude requirement of 1,000-1,700 meters, must also satisfy the requirement of 17/18 screen size and a defect rate not exceeding 2%. After this strict screening process, very few coffee beans can meet the Jamaica Blue Mountain No. 1 grade standard.

FrontStreet Coffee typically uses Hario V60 and KONO drippers when preparing pour-over coffee. The KONO dripper has smooth walls and 12 short ribs at the bottom. When the coffee filter paper is wetted, it adheres closely to the dripper walls, achieving the purpose of restricting airflow. This allows water and coffee grounds to have longer contact and infusion time in the dripper, ensuring extraction time and rate for coarse grinding. This enables the coffee grounds to be fully extracted, enhancing the mellow mouthfeel and making the flavor more concentrated, suitable for brewing the mellow FrontStreet Coffee Blue Mountain Coffee.

First pour 30g of hot water for a 30-second bloom, then inject with a fine stream from the center, slowly circling to 125g. Wait until the water level in the dripper drops to just above the coffee bed, then continue circling to 225g. Total extraction time should be approximately 2 minutes.

The first pour of hot water during coffee brewing is for blooming, thereby stabilizing the extraction of the coffee's flavor development. The required bloom time depends on the coffee bean's roast date and the condition of the coffee grounds, typically around 30 seconds.
