Flavor Description:

Dry aroma features blueberry, peach, lemongrass, bergamot, and floral notes.

Upon entry, you'll experience fresh lemon peel, citrus, bergamot, blueberry, peach, and frangipani.

In the middle to latter stages, fresh strawberry, honey aroma, and sweetness emerge, as fragrant and aromatic as flower nectar, with a smooth texture.

This custom product, specially commissioned from Colombia's premier La Esperanza Estate, was conceptualized and named by us. As a sequel to the Hanami Geisha, which featured the elegant charm of washed processing flowers, this particular version emphasizes the distinctive refined honey aroma of honey processing and that heart-soothing silky smooth mouthfeel.

Today's honey processing styles are diverse, with white, gold, red, orange, and black varieties too numerous to list. Even dry fermentation or anaerobic fermentation techniques can be combined with honey processing methods. Amidst the complex evolution of processing techniques, how much honey processing flavor can you still taste?

After several rounds of sample exchanges, we selected specific batches of Geisha from Cerro Azul Estate and Magarita Estate, grown at altitudes of 1,600-1,750 meters, for this Kamitsu edition.

When developing this product with the estate owner, we directly appealed to the original intention of honey processing—achieving that vertical sensory experience as suggested by its name, especially when dealing with a delicate and elegant variety like Geisha.
