Yemen, which continues the lifestyle preserved thousands of years ago, has many areas where the central government's authority cannot reach. Ethiopia, separated from Yemen by the sea, also exported coffee through the port of Mocha, so Ethiopian sun-dried processed coffee is often called Mocha (such as Ethiopia Harra Mokka). Yemen Mocha is the originator of the world coffee trade. Yemen's contribution to promoting delicious coffee to the world is undeniable. It is called "Arabia Coffee," which later became the origin of the name "Arabica original species."

For coffee enthusiasts with some knowledge, mentioning Yemen coffee easily brings to mind "Mocha."

Yemen's coffee cultivation history is quite ancient. By the early 17th century, Yemen's coffee beans began to be exported to Europe from the southwestern port of Mocha. Europeans therefore called these coffee beans shipped from the port of Mocha "Mocha coffee." Ethiopia, facing Yemen across the Red Sea, later also used the port of Mocha to export coffee beans,以至于 Ethiopian sun-dried processed coffee beans are also often considered as Mocha.

Yemen's coffee cultivation methods remain similar to those of 500 years ago, mostly grown on mountain slopes reaching 3,000 to 7,000 feet. The harsh growing conditions result in smaller coffee beans but with considerable hardness. Yemen's coffee varieties are also quite complex, including the small-seeded Ismaili and ancient heirloom, as well as Adeni and Mattari varieties.

Yemen is located in Asia, facing Ethiopia in East Africa across the Red Sea. It is the highest quality producer of natural sun-dried coffee. Coffee produced in Yemen is called Mocha beans. In fact, Mocha is a coffee export port, and early sun-dried beans from nearby East Africa were all exported from the port of Mocha to various parts of the world. Therefore, the sun-dried beans produced in this region, including Yemen and Ethiopia, are collectively referred to as Mocha beans.

Yemen's natural sun-drying process involves manually harvesting fully ripe coffee beans and then directly placing the freshly harvested beans in a dedicated coffee drying field or in front of their own compacted mud yard to receive sun exposure. During the sun-drying period, similar to drying rice in Taiwan, wooden rakes are used to turn the beans to ensure each bean dries evenly. After about twenty days, when the coffee drying is complete, the outer pulp and skin are removed to extract the coffee beans. Yemen coffee features rich, complex, wild, and mellow flavors with strong fermentation notes and lower acidity. Additionally, Yemen coffee often contains an uncertain factor (the timing of seasonal rainfall) that makes it unpredictable. Calling it the world's most special coffee is by no means an exaggeration.

Yemen Mocha is a coffee full of wonderful changes. When brewed, at high temperatures, you can first smell the fermented wine aroma. As the temperature decreases, you begin to taste the variable and complex flavors. At low temperatures, you can experience the complete release of acidity and sweetness from the coffee.
