Geographical and Historical Context

Yemen is located in Asia, facing Ethiopia across the Red Sea. It is the highest-quality natural coffee-producing country using the dry processing method. Coffee produced in Yemen is called Mocha beans. In fact, Mocha is a coffee export port. Early natural-processed beans from nearby East Africa were all exported from Mocha Port to various parts of the world, so the natural-processed beans from this region, including Yemen and Ethiopia, are collectively called Mocha beans.

Natural Processing Method

Yemen's natural processing method involves manually harvesting fully ripe coffee beans and then placing them directly in specialized coffee drying fields or in their own compacted dirt front yards to sun-dry. During the sun-drying period, similar to drying rice in Taiwan, wooden rakes are used to turn the beans to ensure each bean dries evenly. After about twenty days of drying, the outer pulp and skin are removed to extract the coffee beans. Yemen coffee is characterized by rich, complex, wild, mellow, and strong fermentation flavors with lower acidity. Additionally, Yemen coffee often contains an uncertain factor (the timing of seasonal rainfall) that makes it unpredictable, making it no exaggeration to call it the world's most special coffee.

Growing Conditions

Yemen coffee grows on steep terrain with little rainfall, poor soil, and insufficient sunlight. These unique and difficult conditions that are unfavorable for coffee cultivation have nurtured the irreplaceable Yemen Mocha in the coffee world. The main coffee-producing regions are Sanani, Matari, and Ismaili.

Yemen Mocha green beans contain many empty shells, and the green beans vary in size and color. This is a characteristic of Yemen Mocha and also the reason for its variable aromatic qualities.
