When fresh-roasted coffee beans complete the roasting process, they undergo a series of chemical reactions while producing large amounts of carbon dioxide. Most of these gases remain trapped inside the coffee beans and are gradually released over time. During the first few days after roasting, the degassing process is particularly vigorous—this is why we see small bubbles when brewing very fresh coffee.
Therefore, many coffee shops, when receiving freshly roasted espresso beans, will let the beans "rest" and degas in packaging with one-way degassing valves for 5-20 days. This helps ensure stability during coffee extraction, which is what we commonly call "the purpose of bean resting."
Additionally, storing freshly roasted coffee beans in bags with degassing valves allows for more complete flavor development compared to placing them directly in completely sealed glass jars.
Bean Resting Time for Fresh-Roasted Coffee Beans
For light-roasted single-origin beans, you can start tasting them one day after roasting. During this period, you can also experience the flavor changes that occur in the coffee over time.
For medium to dark-roasted single-origin and espresso beans, it is recommended to rest the beans for about 3-5 days.
For French-style dark roast (roasted to the end of the second crack) espresso beans, it is recommended to rest the beans for about 10 days.
We recommend purchasing freshly roasted coffee beans and storing them properly to avoid missing the optimal flavor window.
As storage time extends, coffee beans simultaneously undergo aging. Therefore, don't over-rest your beans.
