The Roasting Process
Before roasting coffee beans, they must undergo an initial screening process to remove defective beans, preventing these bad elements from ruining the coffee's flavor.
Freshly roasted coffee beans require the most skillful technique. Different coffee beans have different roasting degrees. For example, Indonesian Mandheling cannot be roasted too lightly, as the coffee's taste would lack richness; while Ethiopian coffee beans cannot be roasted for too long, otherwise the coffee's fruity acidity, floral aroma, or citrus flavors cannot be properly expressed. As for what degree to roast different varieties of coffee beans, these results were determined through repeated cupping by Teacher Fu. This knowledge stems from Teacher Fu's SCAA training. SCAA, full name—Specialty Coffee Association of America, translated into Chinese as "美国特种咖啡协会" (American Specialty Coffee Association), though a small number of people call it "美国精品咖啡协会" (American Fine Coffee Association). SCAA is the world's largest coffee trade association and a trade organization focused on high-quality coffee.
After coffee beans are roasted, they must undergo another careful selection process to remove empty shells and other defective beans, ensuring the quality of the beans used.
These seemingly simple selection tasks, though meticulous and tedious, can make the brewed coffee taste clean and refreshing. However, many coffee shops are unwilling to perform this troublesome procedure.
Bean Blending
After coffee beans are roasted, they are blended according to the taste characteristics of different beans. The fresh roasted coffee beans used in the store are all blended by roasting masters, perfectly balancing fruity acidity, nutty flavors, and aromatic bitterness to form the unique authentic taste of coffee.
